Amish Breakfast Casserole

This was truly fantastic! I made it for my in-laws' visit at Christmas, so I needed something quick, tasty and presentable. I used leftover bacon that I just chopped up and then sauteed with the onion (and added garlic). I was really afraid of the cottage cheese because we aren't big fans of it plain but decided to go for it. You can't tell it is there but the flavor is amazing, so don't leave it out! I also added chili powder and really liked the "pop" it gave. My cheese preference was half Cheddar and half Colby Jack, with some Parmesan just for fun. Also, for lack of time, I used pre-shredded potatoes (found in the egg section). I made this the night before and cooked it in the morning, which added about 15 minutes to the cook time. Super versatile, easy to prep, can make ahead and tasty!

Jalapeno Popper Spread

Every single time I make this, people ask for the recipe (thankfully it is easy!!) and ask me to bring it again. Wonderful to put together ahead of time and then bake before you serve (or simply warm up).

This was okay. You definately need to get the lumps out and it needed some more "Umph". I will work with it again because it has potential!

Honey Wheat Cookies

I loved these but I tweaked some things (small things!!). I was looking for a Breakfast Cookie recipe that was healthy and yummy for the kids (and adults, who am I kidding??). The changes I made: added an egg, used instant organic flavored oatmeal in place of the dry milk, used wheat germ in place of the wheat bran and added some golden raisins. For the record, the kids (and adults) do love this and I certaily don't mind them eating them!
