Cheesy Catfish Chowder
I have never had fish chowder before. All of my kids said it was great! I did saute the celery with the onions, and didnt add all the salt it called for. I used tilapia instead of catfish...it is a little heathier. I also used fat free chedder cheese and light butter to cut some calories. For the kids I put it on a bed of brown rice for bulk to fill them up and added a few chips for dipping.(a kid thing) All in all, great recipe!

Fabulous Oatmeal-Bran Cake
I made this tonight trying to find a healthier alternative for Thanksgiving cake. This was fabulos! I added 1 tsp vanilla, 1/2 white and brown sugars, and 1/2 cp vanilla ff yogurt w/1 tbsp canola oil. I also added 1 cp shredded zucchini, 1/2 cp raisins and 1/2 cp pecans. Had to bake about 15-20 minutes longer as a muffin so the inside would get done. Great recipe: only 3 points a muffin if you are on Weight Watchers!

Grandma Ople's Apple Pie
This was a great pie...once I stuck to the origional recipe. I made the mistake of putting in heavy cream for the water, which totally changed the taste of the pie. I made two pies; one w/ latice and one w/ a crumble topping. The second time I made it, I did it exactly as directed w/ the exception of tossing the apples in cinnamon and 2 tsp vanilla. A big diffrence in the pie is the apples: Granny Smith is too tart w/ no sweetness. All the rest fall apart while baking and doesn't hold its sweetness. The best apples to use are the Golden Delicious green apples; a little tartness w/ sweetness. I also tossed in the sauce reserving a lttle for the topping. I drizzled caramel across the top before placing the lattice. Very good pie. UPDATE: To keep the pie from having juice all over the place, as well as a too juicy pie, add 2 tbsp of quick cooking tapioca to the apple mixture. The pie will hold better.
