Peppermint Brittle
I made this for a work function and everyone absolutely loved it... People thought I had bought it! I altered the recipe just slightly - this recipe is definitely one you can play by ear. I put a thin layer of semi-sweet chocolate down first and let it harden before spreading the white chocolate/peppermint mixture. I did seive the crushed peppermints so only the finest grains were in the white chocolate layer, then pressed larger pieces into the top. It's delicious, pretty and so easy!

Indoor S'mores
I tried this without the corn syrup, and I liked it a lot better... I also added about a cup of marshmallows to throw in with the cereal so they stay whole and chewy. A really delicious recipe! (and EASY)

Baked French Toast
Soooo ooey gooey good! Per previous suggestions, I did cut back on the liquid - using only 6 eggs and 1 cup each of the milk and half-and-half. I couldn't fit a whole loaf into a 9x13, either, but it wasn't a problem with the addition of a 9x9. EVERYONE went back for seconds... even my mother said she wouldn't change a thing. That in itself is a rave review! This one is getting laminated.
