About this Cook
I am a Mom of 5 sons and one daughter. We enjoy cooking and baking and being hospitable. Before I as married I worked in a wonderful bakery called "Sweet Dreams". It was there that I learned how to cake decorate and bake wonderful desserts.

I love to cook lasagna & spaghetti, chicken enchiladas and pizza is always fun to make with the kids.
My favorite family cooking traditions
Thanksgiving Dinner and Christmas baking are a special time especially for my daughter and I~We have an excuse to cook & bake for days!

I made bean soup one time and I guess I over cooked it or over stirred it. Anyway, the "eyes" of the beans came out and they looked like little maggots. We just could not bring ourselves to eat it!

Amish Breakfast Casserole
This is our FAVORITE egg dish! However, there is no way that it takes 15 minutes to prepare! You have to grate cheese, cook bacon, chop onions, crack eggs...I 4X the recipe and don't use the swiss cheese. When you brown the onions with the bacon the onions get very dark and small. I was concerned about the look and how they'd taste in the caserole~it gives a wonderful flavor! I added 3 more eggs for every 6 the recipe called for and cut the amount of bacon in half. It is Yummy as usual!! The recipe is so flexible~you can add, take out, change things to your taste and it turns out wonderfully!! All 6 of my kids, my hubby and my live in in-laws LOVE this!! It does reheat well~if you have any left over. I think I will try making it the night before and then just popping it in the oven because of the loooong prep time! Enjoy!!

Rice & Beans (Haitian Style)
The kids and I loved the recipe...the hubby did not like it. He put ketchup on it. He said the ketchup made it palatable~Yuck~Now you see what I am working with =o) We served it at a pot luck and it was a big hit. Avocado and a dallop of sour cream are yummy additions!

Chinese Cabbage Salad II
A favorite at our house! I make a huge bowl for our crew. A few changes we make are: 1)Add some soy sauce to the dressing. 2)Buy a cooked chicken from Costco and cut it up to add a bit of protein. 3)Use the already shredded cabbage/coleslaw mix instead of the broccoli mix the recipe calls for. 5)We have added raw sunflower seeds as well~yummy! 5)One last thing~We don't mix the salad and dressing and all together because it gets too soggy too fast. We do an assembly line adding what you want and then each person can stir their portion. All 6 of my children & my hubby & my in-laws love this recipe!!
