Eileen's Spicy Gingerbread Men

Oh man... this is a dough I will see in my nightmares. It was AWFUL to work with! I followed the recipe exactly and the dough was so crumbly. I couldn't roll this out, so I just flattened some in to circles and baked. They tasted okay, but I won't be using this recipe again. I don't know what happened.

Peanut Butter Cup Cookies

These are just so good. Such an old PTA recipe to me. I remember my mom making these in the 80s. LOVE it. They're so rich though. I reduced the amount of peanut butter in the batter to 1/4 cup and it was still excellent. I put the unwrapped Reese's in the freezer for about 15 minutes... baked for 10 minutes (because on the first try, I baked for 8 minutes and they were still doughy on the bottom). I also used mini cupcake paper liners for my mini pans. This made 36 perfectly.

Lime Chicken Soft Tacos

This was just alright. The chicken had no color and was just kind of bland. I'd rather just stick to the taco packets and add a splash of tequila and red wine vinegar to that.

Chewy Sugar Cookies

Dec 2009 update, I tried this will all margarine, against my better judgment. Bad idea. They spread sooo thin, I had to throw half of them out. I'm so mad at myself. Stick with all butter, or if you want to use margarine, make 1/2 of it shortening. YUM. I tested this recipe versus "Cracked Sugar Cookies I" from this site in a sugar cookie challenge. This recipe won. Everybody said it was the more 'traditional' sugar cookie, like you'd get at a bakery. I must say that I used all butter in place of margarine (still delicious), but next time I'll use the margarine.

Cracked Sugar Cookies I

I used this recipe versus the "Chewy Sugar Cookies" recipe in a sugar cookie challenge. The consensus was that "Chewy Sugar Cookie" won. However, this still tasted really good. This was a more stout thick cookie. It's also not that sweet... if I make these again, I'd just up the sugar another 1/4 cup.

Overnight Coffee Cake

This was pretty good for my first coffee cake. I had no nuts in the house so I left them out, but next time will definitely use them. I would've like a little denser cake, but it's a good base recipe.

Spicy Rapid Roast Chicken

Yummy. Turned out kind of like what you'd get in the grocery store. Next time I may double some of the spices... the key to the delicious tasting grocery ones usually involve a lot of salt and seasonings :)

Butter Rich Spritz Butter Cookies

This is it. I've been searching for a recipe that tastes exactly like my grandmother's butter cookies... I have fond memories of baking them with her when I was little. She died four years ago and every time I ask my mom for this recipe she said "Oh it's here, somewhere..." I went through most of the spritz/butter cookie recipes on this site and I knew for a fact my grandma did not use cream cheese in hers, so those were automatically thrown out. I tried one using regular granulated sugar, but it wasn't right... THIS one is right. The taste and texture is spot on. The only thing I did was increase the vanilla. For those who think this cookie has an after taste - I guess make sure you use high quality butter. This is one recipe where you shouldn't use 'generic' or cheaper butter, since the flavor is dominant.

Cake Balls

I really wanted to love this recipe, considering how many cute things you can make with it... but it was just not good to me. First off, the consistency of the cake is REALLY unappealing. My boyfriend said that it was the texture of a "mini donut hole drenched in milk"... whatever that means, basically - very mushy (and I didn't even use the entire container of frosting). I used Wilton candy melts in chocolate and vanilla... afterwards, the taste was just TOO sweet. I love confections, but this was just too much. After eating one, I needed to drink an entire glass of water because it was too sweet. It's a good idea, and the pictures are so cute, but to me, baking is about taste, texture and balance. This fell short :(

Big Soft Ginger Cookies

I used light butter in place of margarine... spiced it up a lot (to our taste preference) and also added chili powder. Chilled the dough for 45 minutes, and just spooned the dough on to a cookie sheet... sprinkled with red sugar and baked for 9 1/2 minutes. They came out perfect. Delicious and so soft. Everyone loved them. I'm making another batch right now, but doubling.

Southern Sweet Potato Pie

I may have to review after this has had time to completely cool... but as it stands right now, it may be a TAD too sweet for my tastes (and I like things sweet). I don't know if it is the addition of the 1/4th cup light corn syrup, but it's kind of oily? It still tastes good though.

Blackberry Cobbler II

Wow! This is such an excellent and simple recipe. I used fresh blackberries and blueberries... I should have read the reviews before making it but I was so excited to get started... next time I will 1.5 the biscuit topping. I may reduce the sugar in the fruit mixture as well. But overall, this was fantastic. I love using my cast iron! My first time making cobbler too.

Restaurant-Style Buffalo Chicken Wings

This was so easy. I've always been intimidated by chicken wings at home. But from now on, I'll make my own. I used whole wheat flour so the breading wasn't thick at all, but it was still great. I didn't deep fry them either. Baked at 400 for 30 minutes on a wire rack placed on a cookie sheet. I had the oven fan on just in case, because the fat dripped down from the wire rack on to the sheet and smoked just a TAD. Not bad at all though. Afterwards I tossed them with Texas Pete/butter mix and another batch in just regular BBQ sauce (Sweet Baby Ray's - so good).
