Salsa Chicken Rice Casserole
Delicious! I made no changes except the way I prepared it (simmered chicken and onions in skillet with salsa to cook). I'm not a huge casserole fan, but this was DELICIOUS!

Homemade Black Bean Veggie Burgers
NO complaints! This was absolutely delicious. I forgot the hot sauce in the recipe, but there was plenty of flavor (I did add just a little salt and pepper to taste prior to adding the egg). I topped with cheese, lettuce, tomato and pickles, just like I would a regular burger. The flavor was good enough, though, that you wouldn't HAVE to add anything. I added the beans to the food processor, after the pepper/onions/etc. were chopped well. I had no problems with the burgers falling apart or sticking to the pan, as others have mentioned. I used non-stick cooking spray on my baking sheet. I'm wondering if some reviewers didn't mash the beans up enough to get a pasty texture. I will make this again...and again!!!

Clone of a Cinnabon
Last time I made the recipe as written and it was good. However, after reading other members' reviews, I made a few alterations this time, with TERRIFIC results that I prefer to the original. I increased the filling by about 50% (used 1.5 cups brown sugar, 3.5T cinnamon, and 1/2 cup butter). I combined the melted butter, cinnamon, and sugar, and didn't have any trouble with filling falling out. I increased the filling, mostly so that I wouldn't have leftover cream cheese. I used 8oz cream cheese, 1/2 cup butter, 3 cups confectioners sugar, 1.5 teaspoons vanilla, 1/4 teaspoon salt, and about 5T milk. I divided it into 4...used 1/4 and froze 3/4 in 3 ziplocks. Lastly, I made 24 cinnamon rolls, which were plenty big. I baked them at 350 for about 20 minutes. At 400 degrees, I had trouble with the tops browning before the rolls were all the way cooked. YUM! By far, the best cinnamon rolls I have ever made.
