Microwave Lemon Curd

This had a very nice taste but never firmed up after cooling so I reheated and added some cornstarch mixed with lemon juice and brought it to a boil. after cooling it was perfect.

Hamburgers and Ketchup Gravy

They do tend to be fragile so handle with care.Maybe an egg added would bind them but also it could change the taste. I didn't have quite enough ketchup for the cup in the sauce so I added a little bottled barbeque sauce to make up the difference. These were so good. They would be good on a nice bun too but I served them plated with Dad's Pan-Fried Green Beans (from all recipes) and a homemade banana raisin bread. Such good comfort food on a cold night.

Very good. I have a microwave steamer so I steamed the beans while I mixed up the sauce.Two of us finished a pound of beans and I wish I had more to make.

Vegetarian Sweet and Sour Meatballs

I am always looking for vegetarian recipes to serve my non-vegetarian friends and I made this for my annual Christmas Eve get together.Everyone loved these meatballs and some actually thought I was serving meat on Christmas Eve. I made them Italian style instead of sweet and sour so instead of your sauce I used a good quality Italian marinara sauce. They were excellent and in fact the reason I am commenting so long after the fact is that the original batch I made was for 20 servings and I am making them tonight for just the immediate family so I needed to convert to 4/5 servings.
