Delicious Ham and Potato Soup

Wow, this was awesome! It was so easy to prepare that I didn't have high hopes but I was wrong. The flavor was great. I used about two cups of spiral ham left over from Christmas and almost 4 cups of russet potatoes. I didn't have celery so I didn't add that and I used Fat Free milk which is what I had on hand. It took less than 30 minutes to make and it was a great soup that even my 3 picky kids gobbled up. I will definitely be making this soup again. Thank you for sharing this great, easy recipe.

Iced Pumpkin Cookies

I was excited to make these from all the good reviews it received. I made them over Thanksgiving break and we didn't care for them. Even my husband who loves pumpkin didn't care for these. I followed the recipe exactly too. They were too "cakey" were my husbands words. Maybe they would have been better with the icing but alone, they were not very good. Sorry, but I will continue to look for a recipe for a pumpkin cookie that we like.

Buttermilk Pancakes II

OMG! These are the best pancakes ever! I made these today for the first time as I have been wanting to make buttermilk pancakes. Well, I found my recipe. I mixed the milk, buttermilk and eggs and let them come to room temperature first like other reviewers suggested. The store only had reduced fat buttermilk and I had fat free milk but the taste was still fantastic! You couldn't even tell I used low fat ingredients. I followed the recipe exactly and they came out perfect. A little crispy around the edges and soft and fluffy in the middle. It did make more then 12, and mine were about 6" around, but that didn't matter as they were getting eaten up as soon as they came off the griddle. I will definitely make these again and again.

Oatmeal Peanut Butter Cookies

I just finished making these cookies and they are so good. I used a bit more peanut butter, just to finish up what I had left and about 1/4 cups more oats. I also used unsalted butter, I never use margarine in my baking. Other than that, I followed the recipe exactly. They only took 10 minutes to cook. Don't be tempted to overcook them. You have to cool them completely on the cookie sheet because if you try and take them off before than, they break apart. These are definitely going into my cookie rotation.

Cream Cheese Pound Cake III

I was a little disappointed in this cake after reading all the positive reviews. I made this cake and followed the instructions to the letter. I checked it after 1 hour and it wasn't done so I let it go the last 20 minutes. The whole bottom of the cake burned. I cut off the burned part and ate the rest with ice cream. It had okay flavor but nothing spectacular. I will still be searching for the perfect pound cake.

Chewy Coconut Cookies

Just finished making these and they came out great! My 3 kids loved them and they don't like coconut. I only had sweetened coconut flakes and they still came out good. I followed the recipe exactly but added a few chocolate chips to some of the batter. I will definitely make again. The only complaint is that it didn't make enough ;-)

These really do melt in your mouth. They were easy to make and didn't last very long in my house. Next time, I think I will dip the tops in melted chocolate.

Double Chocolate Pie

I have been wanting to make a homemade chocolate pie for some time now and thought this was the recipe. I followed it exactly and it was awful. I was surprised because most of the recipes I use from this site are great. I was disappointed with this one. First off, it didn't set at all. When I cut into it, it oozed all over and it looked terrible. Second, it had way too much vanilla. I had a feeling when I was adding it that it was going to be too much and I was right. I guess I will have to continue my search for a good chocolate pie recipe. Sorry.

Brown Family's Favorite Pumpkin Pie

I have made this pie two times now and am just getting around to rating it. I am not a fan of pumpkin pie but I can eat this one. It has more of a "mousse-like" filling, not as dense as your regular pumpkin pie. I made this for my husbands work and it was a hit. I followed the recipe to a tee, all except the crust. I used a graham cracker crust and it was great! Thank you for sharing.

Grandma's Lemon Meringue Pie

Finally I have found the perfect recipe for lemon meringue pie! I made this tonight for my dad and it came out great. The only thing that I wasn't clear on was the amount of lemon juice to use. 2 lemons can mean different things to different people. I used 1/2 cup of lemon juice(about 3 lemons) and 1 tablespoon of zest. It was the perfect balance of sweet and tart. Also, it doesn't mention how to cool it. I left it at room temperature for about an hour and then put it in the refrigerator for about 5 hours. One tip I have is after the lemon filling starts to boil, only boil it for 1 minute so the cornstarch doesn't lose its thickening power. Then, after you add the tempered eggs back into the hot mixture, boil one more minute and it will be a perfect thickness. Also, when you fill the pie crust with the lemon filling, the crust should still be warm and when you top the pie with the meringue, the filling should still be pretty warm. This will help seal the meringue after it cools so it doesn't separate from the crust. I will definitely keep this recipe and I have a feeling I will be making this again very soon.

Easy Key Lime Pie I

I never knew I liked key lime pie until I made my own. This is super easy and oh so good! I made my own graham cracker crust, topped it off with homemade whipped cream and it was excellent. I had to cook it longer than the stated time but it was well worth it. Very simple and tastes like you slaved in the kitchen all day. My husband and neighbors loved it. Thanks for sharing.

Grilled Asian Chicken

I was looking for a quick chicken marinade with ingredients I had on hand. I didn't have a lot of time to marinade it like most recipes call for. This was a great recipe! It had good flavor and I had everything on hand. The only things I changed were to used ground ginger, I added extra garlic(we love garlic) and some sliced onions. I used three big Costco chicken breast, butterflied and this was the perfect amount of marinade. I put all the ingredients into a freezer bag and put the chicken in the bag and into the fridge for about 3 hours, turning it every so often. It was so juicy and had really good flavor. My husband grilled it for about 4 minutes on each side and it came out perfect! It was even good the next day heated in the microwave on 50% over white rice. Not dry at all. Thanks for sharing. This will definitely be going into our monthly rotation.

Basic Crepes

Wow, I never knew crepes could be so easy to make. These came out so good and they were very easy to make. I put some Nutella spread on them, fresh strawberries and topped it off with homemade whip cream, chocolate sauce and powdered sugar. They were a huge hit!

Fruit Pizza I

This was an awesome dessert and not very hard to make. You can top it with basically any fruit you have on hand. I used strawberries and blueberries. The crust is very good, not too sweet.

Blueberry Crumb Bars

The only reason I rated this a 4 star is because I changed the recipe a bit. My husband and 2 of of my 3 kids loved it. I followed the advice of others and used 1/2 butter and 1/2 shortening. I also used 1/2 white sugar and 1/2 brown sugar in the crust. I halved the recipe so I put it in an 8x8 pan. I still used one egg, beaten, and I added 1/2 tsp of vanilla to the beaten egg before adding it to the mixture. I used the salt and 1/2 tsp cinnamon(I would definitely not leave this out). I pressed 1/2 the batter into the bottom of the pan and for the top, I also "flattened" it out to make like a top crust. Before putting it in the oven, I sprinkled it with a little white sugar. I cooled it completely before cutting it and it was great. The will definitely be going in my recipe box.

Apple Crisp II

This is the best apple crisp I have ever eaten! It was simple to make too. I did do as others suggested and instead of sprinkling the sugar and cinnamon on the apples, I mixed it all together with the apples before putting them in the dish. I used a 9x9x2 pan since I halved the amount of apples. I used 5 medium granny smith apples and left all the topping amounts the same(we love crunchy topping). I only added 1 Tbs of water and that was plenty. You get the natural juices from the apples. I cooked it for 45 minutes at 350 and it came out fantastic. We served this warm out of the oven with some vanilla ice cream! All I can say is YUM!!! I will definitely e making this again. Thanks for sharing your recipe.

Asparagus Cashew Rice Pilaf

This rice was excellent! It was my first time making a pilaf and it came out great. Even my 3 picky kids ate it who usually don't even eat asparagus but the asked for seconds and thirds!! I only gave it 4 stars because I didn't follow the recipe exactly. I changed the following: 1)instead of 1/4 cup butter, I used a tablespoon of butter and a tablespoon of olive oil. 2) I fried the asparagus in garlic and a little olive oil instead of boiling it. 3) added a lot more garlic (we are garlic lovers). I have made this rice two times in the last week and have use both vegetable broth and chicken broth and both are great! This will definitely become part of our rotation as a side dish. Thanks for sharing.

Roasted Vegetables

This was a great recipe. I followed it exactly except omitted the butternut squash as I didn't have any on hand. It still came out great! Thanks for sharing. You need to make sure to stir them or they will burn. Great recipe as you can make it with any veggies you like.

Peanut Butter Bars I

WOW is all I can say! These were so easy to make and taste just like peanut butter cups, which I love. My 6 year old and 4 year old helped out. I followed the recipe exactly except for the following changes: 1)I used Honey Made whole graham crackers chopped finely in my food processor. 2) I took the advice of another reviewer and "melted" the peanut butter with the butter. The results were fantastic! If you like chocolate and peanut butter, then you will love these. Thanks for the post.
