I am a busy stay at home mom of 3 girls. I love to cook and try new recipes. I enjoy spending time with my family whenever I have the chance. I love to bake just about anything so I am well liked by my neighbors as I give them a lot of my baked goods. If I ate everything I baked, I would be as big as a house!
My favorite things to cook
I love to cook Italian meals because they usually go pretty far and the kids love pasta dishes. As for sweets, I love making cookies and cakes. I love anything chocolate!
My favorite family cooking traditions
Being of Mexican decent, I love to get together with the family at Christmas time and make tamales. We make pork tamales and it is a family affair and it takes all day. I am hoping to pass this tradition on to my 3 girls.
My cooking triumphs
Usually all my baked goods come out good and people come back for seconds. I have a fantastic family recipe for a homemade carrot cake that always make them come back for more. I also make a mean chocolate chip cookie!
My cooking tragedies
It took me a while to make Spanish Rice. I would get so mad when it wouldn't come out right that I would throw the whole thing in the garbage. I got it down now and I don't even have to measure anything.

Caramel Popcorn
OMG!!! This recipe should come with a warning label that reads highly addictive! It is so easy and it tastes so much better than any you can buy. Like others suggested, I used only 1/2 cup butter and it was plenty. I popped two bags of the 94% Fat Free Microwave popcorn(that is all I had on hand) and I also used Safeway brand brown sugar. I was afraid when I took it out of the oven and it was sticky. I baked it in two 9"x13" glass dishes sprayed with Pam. When I took it out of the oven after the hour was up, I spread it out on a jelly roll pan and kind of separated it a bit while it was warm. After it cooled, it was perfect! Just make sure you stir it up every 15 minutes like the recipe says. Next time, I am going to add peanuts or almonds. This would be great to give away at the holidays. Spaghetti Pie III
Good starting point but I added sauteed onions, garlic and Montreal Steak Seasoning to my meat before adding the pasta sauce. I also added a can of diced tomatoesit didn't seem like there was enough sauce. I liked the flavor the sour cream and cream cheese gave it. Good alternative if you don't have Ricotta on hand. Next time, I may use two jars of sauce. All in all, it was an easy dish to make and the family liked it.

Delicious Ham and Potato Soup
Wow, this was awesome! It was so easy to prepare that I didn't have high hopes but I was wrong. The flavor was great. I used about two cups of spiral ham left over from Christmas and almost 4 cups of russet potatoes. I didn't have celery so I didn't add that and I used Fat Free milk which is what I had on hand. It took less than 30 minutes to make and it was a great soup that even my 3 picky kids gobbled up. I will definitely be making this soup again. Thank you for sharing this great, easy recipe.
