About this Cook
My favorite things to cook
Dishes with interesting tastes. I love "mixed foods," dishes that combine lots of flavors for something delicious. That's as simple as a great salad or casserole, or something more exotic. But it all has to be fairly easy and not be too time consuming. I have better things to do than stir something for an hour. I love robust flavors with lots of spices. Exotic is good - but often my family doesn't share my desire. That's OK, I'm probably more into flavor than most. I avoid beef because chicken and fish are better. Two members of my family dislike anything but fried, mild fish/seafood. So my challenge is to either find fish dishes we all like and are healthy.
My favorite family cooking traditions
Breakfast for dinner. Grilling on the deck. Pecan pie (my late father-in-law loved my burned attempt and ate the entire thing in one day!)
My cooking tragedies
Why remember the ugly.

Restaurant-Style Buffalo Chicken Wings
Awesome! Make sure you cook them enough. The second time I made them I got impatient and pulled them out too early. The family loved them and asked for them again. Don't skip on the refrigeration.

Pork Chops with Apples, Onions, and Sweet Potatoes
I liked this. The flavor of the onion, sweet potato and apple was really good. The apples were a little mushy for me so next time I might add them later so they'll be a little firmer. I added much less pepper. I'd like to try this in the crock pot. Really good one pot meal.

The Best Seafood Stuffed Mushrooms
I tried to make this a low fat treat by using fat free cream cheese. Not a good idea. If I made it again with the fat free I would only use 4 oz. - it was a little runny. I had 20 large mushrooms and still had lots of filling left over. I added the parmesan and it was good. I topped a couple with pepper sauce after they were cooked and I liked the added punch.
