Jamie's Minestrone
We have never been much for eating soup, but this recipe changed our minds. I changed the recipe a little, but this is an awesome base recipe. I substituted cabbage for the spinach and added 2 more cups of water. I also omitted the fresh oregano and basil for dried berbs - 1TB. Herbs de Provence and 1Tb. Basil, as well as adding a lot more pasta. I served with Sunflower and flax seed wheat rolls - what a healthy meal. Great recipe - Thanks Jaime!
