Savory Cheddar Zucchini Muffins
Pretty good overall. I reduced the flour to 1 1/2 cups and added 1/2 cup corn meal. I also squeezed the grated zucchini between paper towels to reduce the liquid. The muffins came out crispy on the outside and tender on the inside. They made a nice addition to our supper of white chicken chili. My family loved them!

Sour Cream Corn Bread
Great cornbread! I added a couple of chopped jalapeno peppers, 1/2 cup of fresh corn kernels, and some shredded cheddar cheese. Delicious! My husband said it was the best cornbread he's ever had.

Oatmeal Banana Nut Bread
This is the best banana nut bread recipe I have ever tried. I have used this same recipe countless times and have made very few adjustments. I recently started substituting 1/3 of the shortening with fat free vanilla yogurt, with good results. I have also started adding flax seed along with walnuts for the health benefits. My kids and friends rave about this bread!
