Buffalo Chicken Sliders

How Ironic! I had leftover chicken wings from the superbowl party (way too many choices and made way too much food, as usual). So I deboned them, heated up the already sauced meat, tossed that with some chopped celery and then put homemeade blue cheese dressing out for people to assemble their own sliders. A BIG hit!

Birthday Bones

I used a 1 1/4" dog bone cookie cutter I got off of ebay. My pit bull puppy loves these treats when we are doing obedience training. They smell soooo good when baking. Toby goes nuts when he smells them!

Heavenly Chocolate Mousse

I needed a "not so sweet, heavy on the chocolate decadence" dessert to serve with a Port (wine). THIS WAS IT! I served it at a food and wine pairing class. I "piped" on to white "won ton soup" spoons and topped them off with a raspberry. The hit of the evening! Not a drop left!

Cream of Mushroom Soup I

Used dried wild mushrooms that I steeped in hot water. Then used that water as the base. Caramelized the onions, then added garlic and thyme. Blended soup until creamy smooth. Tasted and re-seasoned. Pan seared some button mushrooms in bacon grease and freshly cracked black pepper. When browned, I chopped them up to use as a garnish for each bowl. De-LISH!

Downeast Maine Pumpkin Bread

Excellent! Used alot more cinnamon. Felt it could have used a touch less salt. Used the brown sugar, butter and cinnamon glaze on top after pulling out of the oven and poking holes in the top. Perfect autumn bread! Will be baking more very soon!

French Dip Sandwiches

Minor adjustments: beef stock (no salt added) instead of water, triple the garlic, used fresh (1/3 added near the end), a pinch of sugar. Cut tri-tip into smaller pieces as I got a late start. Seared meat in hot skillet after seasoning with salt, pepper, onion powder and garlic powder. Caramelized onions and mushrooms in same skillet and then added to crock pot. Added a couple of mini carrots to flavor the broth and they were like candy... gone in an instant and we fought over them! Reduced broth. Served meat on toasted Dutch Crunch rolls with Italian Blend (6 cheeses) melted on top. S.O. asked how many stars he was allowed to give it and then said... ok... I give it 6 stars!

Shrimp Scampi Bake

I wasn't sold on the mustard but figured I should try the recipe as close to written as possible. Of course, I did add a glug of white wine and some fresh chopped basil and a pinch of red pepper flakes. I did double the garlic, just cuz we LOVE the stuff. I served it with wild rice pilaf (from Trader Joe's) and grilled broccoli. Tasty. I think i would cut down on the mustard just a tad.

Jalapeno Popper Spread

YUMMY! Used low fat mayo, low fat cream cheese, freshly grated parm, 1 small can each of green chile's and jalepeno's including the juices for more flavor, a dash of onion powder and garlic powder. Sprinkled panko bread crumbs on top. It was not greasy at all. Served with tortilla scoops. Tasted very rich despite the low fat version! Will be making this one again!

White Bean Spread With Garlic & Rosemary

This is actually white bean hummus. We did NOT like it the way the recipe was written. We tried our best to "doctor" it up but even with more garlic, more salt, more pepper, addition of parsley, chicken bouillon, roasted red bell peppers... tasting and adding every step of the way we were unable to make this work. I keep thinking that maybe it would have tasted better if it sat a day or two for the flavors to marry.

Gingersnap Dip

After reading reviews I increased the cinnamon and pie spice "to taste". I also added some "Waler's Vanilla Rum" and ZOWIE! IT SINGS!!! I used "Mother's Gingerbread Men" for the ginger snaps. Cute!

I was hoping for a chocolate chip cookie with crispy rice that you hear when you bite into the cookie. There is a bakery near my job that makes them like that. These are chewy but lack what I am seeking. Thanks for the posting anyways.

New Orleans Jambalaya

My first attempt at Jambalaya. My boyfriend RAVED about how good it was! He said "You can make this every week!" Took 1/2 to a potluck (he ate the other half) and they loved it too! I grilled the chicken, sausage and shrimp on my outdoor grill, then added it to the rice mixture... what a difference in flavor!

Fennel and Orange Salad

I think I kept my fennel in the veggie crisper too long as I think it lost it's flavor. I will buy some more and use it right away. I was so bummed it just didn't have the PUNCH I wanted it to have. I'll re-review when I make it again.

Bacon Crackers

Update: Dash of Cayenne Pepper on top of the brown sugar really adds to this recipe! Made this for an appetizer party. They were the first to go. I had to limit folks to just 3 in order for others to get a taste! They stood by the dish and just threw them in like popcorn. I made them several times since then. Thick sliced bacon makes them chewier. Applewood Black Pepper bacon gives them a nice twist. I must say, that "el-cheapo" bacon and ritz are just fine. :) They are affectionatly known as "heart attack crackers" in my group of friends, but they disappear in minutes. Taking them to a poker party tonight. Since my boyfriend shows up later from work I have to hide a few for him!

Shrimp Scampi Cheesecake Appetizer

These disappeared in minutes. They wanted to know where the rest of them were? They actually looked in the oven to see if there were more! I made them with mini cupcake pan and just 3 layers of phyllo dough (each layer brushed with melted butter/evoo combo) This will be at EVERY party I throw! I think I'd make it as a tart also
