Awesome Beef Ribs!

Reviewed: Jan. 13, 2012
4 stars as written, 5 stars with my changes... I HATE it when people change recipes but I am rating BOTH versions. I added Lowry's seasoning salt, black pepper, onion powder and garlic powder to the water for boiling for at least one hour. Doubled the sauce. Added "roasted garlic" and some onion powder to sauce and a splash of balsamic vinegar as well as white wine vinegar (instead of apple cider vinegar). The ribs are very "beefy" tasting. I was amazed! Making them again tonight and will put them on the rotation for sure!!!

Jalapeño Popper Dip

Reviewed: Sep. 30, 2011
YUMMY! Used low fat mayo, low fat cream cheese, freshly grated parm, 1 small can of green chile's and 2 of the jalapeno's including the juices for more flavor, a dash of onion powder and garlic powder. Toasted panko bread crumbs with some parmesan cheese until golden brown. Took it all to work in separate containers. Then I microwaved the dip until bubbly hot. Then I sprinkled panko bread crumbs on top. Served with tortilla chips and toasted baguette. Tasted very rich despite the low fat version! Winner!!!

This is my mom's version too. Her's is hand written on a card that is old, and crumpled and stained. I've eaten this recipe for years. The best!!

Exquisite Pizza Sauce

Reviewed: Jan. 19, 2011
TOOOO sweet AND TOOOO Spicy and I RARELY say that! I followed the directions to a "T"… I also rarely do that. After tasting… I realized I was going to have to doctor it up for my tastes. Let me comment for a moment… this recipe is probably screaming good for all those reviewers but for me, my tastebuds, ME, it's too much of a good thing (sweet and spicy). So I spent another 20 minutes adding, tasting, adjusting, tasting, etc… I think I got it right for MY taste buds. Nothing against the original recipe. Again, it's just not right for me. But since I DID make it as written. I feel I can rate it accordingly. Dang it! I REALLY wanted this to be the BOMB SAUCE I needed. Alas, I ended up with a sauce I could use for my pizza tonight (after doctoring it up). I'm still on the hunt for "THE BOMB SAUCE!"

"SSS" Squash Soup Shooters

Reviewed: Jan. 3, 2011
Tweaked a touch w/ a splash of Dry Sherry, dash of freshly grated nutmeg and 1/2 of the cream cheese. Served in shot glasses w/ drizzle of balsamic vinegar (reduction) and creme fraiche as a "shooter" at a cocktail party. It was a hit!

Easy OREO Truffles

Reviewed: Dec. 9, 2009
Wow! Easy Peazy Parcheesy! Delish! I took them to work and people could NOT believe it when I told them how I made them. I had everyone writing down the recipe. Duh! What's to write??? 3 ingredients! Oh yeah, I did add a butterfinger to the nutter butter ones. I will add some kahlua to the oreo's next time or maybe some cayenne pepper to give it some hidden heat. :)

Buffalo Chicken Sliders

Reviewed: Feb. 6, 2009
How Ironic! I had leftover chicken wings from the superbowl party (way too many choices and made way too much food, as usual). So I deboned them, heated up the already sauced meat, tossed that with some chopped celery and then put homemeade blue cheese dressing out for people to assemble their own sliders. A BIG hit!

I used a 1 1/4" dog bone cookie cutter I got off of ebay. My pit bull puppy loves these treats when we are doing obedience training. They smell soooo good when baking. Toby goes nuts when he smells them!

Heavenly Chocolate Mousse

Reviewed: Nov. 24, 2008
I needed a "not so sweet, heavy on the chocolate decadence" dessert to serve with a Port (wine). THIS WAS IT! I served it at a food and wine pairing class. I "piped" on to white "won ton soup" spoons and topped them off with a raspberry. The hit of the evening! Not a drop left!

Cream of Mushroom Soup I

Reviewed: Nov. 3, 2008
Used dried wild mushrooms that I steeped in hot water. Then used that water as the base. Caramelized the onions, then added garlic and thyme. Blended soup until creamy smooth. Tasted and re-seasoned. Pan seared some button mushrooms in bacon grease and freshly cracked black pepper. When browned, I chopped them up to use as a garnish for each bowl. De-LISH!

Downeast Maine Pumpkin Bread

Excellent! Used alot more cinnamon. Felt it could have used a touch less salt. Used the brown sugar, butter and cinnamon glaze on top after pulling out of the oven and poking holes in the top. Perfect autumn bread! Will be baking more very soon!

French Dip Sandwiches

Reviewed: Nov. 1, 2008
Minor adjustments: beef stock (no salt added) instead of water, triple the garlic, used fresh (1/3 added near the end), a pinch of sugar. Cut tri-tip into smaller pieces as I got a late start. Seared meat in hot skillet after seasoning with salt, pepper, onion powder and garlic powder. Caramelized onions and mushrooms in same skillet and then added to crock pot. Added a couple of mini carrots to flavor the broth and they were like candy... gone in an instant and we fought over them! Reduced broth. Served meat on toasted Dutch Crunch rolls with Italian Blend (6 cheeses) melted on top. S.O. asked how many stars he was allowed to give it and then said... ok... I give it 6 stars!

Shrimp Scampi Bake

Reviewed: Oct. 30, 2008
I wasn't sold on the mustard but figured I should try the recipe as close to written as possible. Of course, I did add a glug of white wine and some fresh chopped basil and a pinch of red pepper flakes. I did double the garlic, just cuz we LOVE the stuff. I served it with wild rice pilaf (from Trader Joe's) and grilled broccoli. Tasty. I think i would cut down on the mustard just a tad.
