Grilled Zucchini I

Reviewed: Aug. 8, 2008
Like other reviewers, this is not "grilled" zucchini. It is also not "healthy" like in the description. You can simply use Olive Oil or Coconut Oil. I also season mine with garlic powder and lemon juice. I really don't think you need a recipe for this, as it's pretty much a trial and error session, tweaked until it's just to your liking.

Easy Lasagna I

Reviewed: Oct. 18, 2007
I really liked the idea of this lasagna, but I did make many changes. I left out the mushrooms and ricotta cheese; I just vamped up the cottage cheese mixture by adding a couple eggs, parmesan, extra mozzarella, basil and parsley. I also added a pound of breakfast sausage to spice up the meat mixture. I like making this dish to freeze and keep on hand in case of dinner emergencies.

Chicken and Dumplings III

Reviewed: Oct. 18, 2007
I thought this recipe was bland. I have been testing chicken and dumpling recipes for quite some time, and I have found the chicken has much more flavor if it is cooked in chicken broth with a few added boullion cubes.

Sesame Green Beans

I like the simple-ness of this recipe. I used lower sodium chicken broth and added a little garlic powder, which is my best friend in the kitchen. Thanks :)

To Die For Blueberry Muffins

I made these muffins for a potluck at my office. They were all devoured, and I got many requests for the recipe! I have also tried them with walnuts and cranberries, and they still turn out delicious!

Best Bread Machine Bread

Reviewed: Jul. 17, 2007
I was so glad I found this recipe. I had inherited a bread machine without the instruction book, so I never knew which order to add the ingredients. This recipe worked perfectly, and I have made a-loaf using this method. I have made a couple of changes to perfect each one - I add only half the sugar and the other half I use raw honey. I use beer instead of water and butter instead of oil. I have also added garlic and onion powder for garlic bread, and I have tried it with sourdough flour, whole wheat flour, ground oats, flaxseed, poppyseeds and lemon juice. I am never disappointed! Thanks so much for sharing!

Easy Chicken Enchiladas

Reviewed: Mar. 29, 2006
My family and I loved this recipe. It was a great last-minute choice, and I was able to make it with ingredients on hand. I also did not use as much cream cheese, substituted black beans and added the cheese for just the last few minutes.

Pico De Gallo

This recipe was great. It was so easy that I was surprised I didn't think of it myself. I, too, only used half an onion, and I also added orange bell pepper and extra cilantro. Muy delicioso!

Chicken in a Pot

Reviewed: Feb. 1, 2006
My husband really enjoyed this recipe, but I thought it was too ordinary. The bread crumbs did nothing for the dish and there wasn't enough sauce left over.

Italian Spaghetti Sauce with Meatballs

Reviewed: Nov. 14, 2005
These meatballs were wonderful. This is definitely an award-winning recipe. My whole family loved it and it makes quick and easy leftovers. I did, however, have simmer the meatballs for longer than 30 minutes for them to cook all the way through. I had made twice the original recipe, so that may be the reason they were undercooked. Didn't matter to me--I still love it!!

Garlic Chicken

Reviewed: Nov. 13, 2005
This chicken is excellent. I cooked it for only 20 minutes at 425, then moved it to the broiler for the remaining 10 minutes, and the bread crumbs were crispy and the chicken was still juicy.

Cream Cheese, Garlic, and Chive Stuffed Chicken

Reviewed: Nov. 13, 2005
This was very tasty. I have made it several times, even though it's quite fattening. I use low-fat cream cheese to help a bit. I find that I also have to cook mike for longer than 30 minutes.

Holy Smoked Bacon and Mushroom Penne

Reviewed: Nov. 13, 2005
This was pretty good. I did change it a bit the second time I made it by adding onion, broccoli and chicken, instead of penne. It's a mix of textures, so it's quite interesting.
