Mom's Chicken Cacciatore
Ok, maybe its cheating to rate a recipe when you make a lot of changes- but I really just used this recipe as a base. And it worked out great! Followed original except: I didn’t coat the chicken in flour, and I cut the chicken into small pieces. Cooked it in a non-stick skillet so omitted the oil. Used fresh tomatoes from the garden, added garlic powder, minced onion flakes, and red pepper flakes. Simmered it till it was pretty thickened and added orzo pasta. Turned out really yummy. Bell Peppers and Pasta
Good pasta dish. It's not my favorite pasta dish, but definitely tasty. It seemed to need a little something extra, so I the only change I made was to add red pepper flakes.

Corn and Black Bean Salad
This is so good. I can see how some might find the vinegar overwhelming but to me thats what I think a corn/bean salad should taste like. I used olive oil instead of vegetable oil, added (4)green onions, and omitted the sugar. It seemed like it needed some color and I was out of red pepper so I added a can of dark red kidney beans and it looks and tastes fantastic. Thanks for the wonderful recipe.
