Low-Fat Blueberry Bran Muffins

For what these are - a healthy blueberry muffin - they are excellent - hearty, moist and a good amount of sweet. And I know they're good because my fiance who is always poo-pooing my health versions of food, actually loved them and asked to take some to work (this is a big deal). The only alteration I made was to double the blueberries.

Curried Couscous

Very tasty and different. Guests were impressed (always good!). Up the curry and cook the couscous in the broth (v water). Thanks!

Classy Chicken

This took longer to make than I expected, but turned out GREAT! My fiancee said it was one of the best dishes I've ever made... and that says a lot. Small changes - I used more sun -dried tomatoes, fresh dill and tore the cooked chicken into chunks. Only drawback... did not taste as good as leftovers. :(

Spinach and Artichoke Dip

I make this recipe all the time - I'm always asked for the recipe at parites. It's super easy too! My only suggestion is to add a couple cloves of chopped garlic. YUM.

Lori's Awesome Cookies

These cookies were GREAT! They do, however, come out pretty flat and stuck to the cookie sheet... remove them quickly. I also suggest adding a few M&M's on the top of the cookies.

Tomato Curry Chicken

Spaghetti with Garlic, Herbs, and Tomatoes

This recipe was fairly easy to make, but to be honest, it was pretty awful to taste. I actually rinsed my spaghetti off to put it into another meal. WAY too many dried herbs... perhaps it could be better when prepared with fresh!
