Peach Bread
Using some other reviewers suggestions, I used fresh peaches (I had just picked a lot of them) and this recipe was great! I used 1/2 cup oil and 1/2 cup peach puree instead of the 1 cup of oil to cut down on calories/fat, cut the sugar down to 1 cup (my peaches were very ripe and sweet) and subbed one tsp of allspice for one of the tsps of cinnamon. Great texture and taste. Super easy! Will make again and again.

Run For The Roses Pie I
Good taste, but I couldn't get it to be a little more solid even after cooking it a full 1/2 hour longer than suggested and decreasing the quantity of chips as recommended. Maybe I'll try refrigerating it before serving to firm it up, but overall it was received well at our Derby Party. Very rich...could have done with a scoop of vanilla ice cream to cut the richness.

Kentucky Hot Brown
Awesome! I did the casserole version because we were serving a larger crowd for a Derby party. Tore the toast into small pieces, layered it with tomatoes turkey and crumbled turkey bacon (skipped the mushrooms b/c I'm allergic) and then the cheese sauce. Won wave reviews at the party and is definitely a repeat menu item on Derby Day! I should add that we lived in KY for four years and always thought that Hot Browns were awful. This recipe totally changed our minds.
