Homemade Black Bean Veggie Burgers
Excellent! Taste & texture are great. I made these in the broiler with some Cajun-seasoned sweet potato fries (also broiled). I followed other reviewers' suggestions and kept the beans, onion and pepper as dry as I could and I had no problems with them falling apart. I used paper towels to squeeze the ingredients dry. I topped them with some pepper jack & cheddar cheese, lettuce, tomato, and sliced jalapenos (good if you like it hot). I also made a small amount of cajun light mayo (1/4 cup of light mayo + 1/2 tsp cajun seasoning) and used that on the toasted buns.

Good Old Fashioned Pancakes
Yummy! Fluffy and delicious. Normally when I use boxed pancake mix I have trouble getting them to come out this fluffy and thick without having half-cooked batter in the middle or burnt edges but these came out just right. For a nice light syrup try 1 cup of sugar free syrup with 1 tsp of ground cinnamon and 1 tbsp butter. Heat it up in the microwave for about a minute, stir and voila.

Gingerbread Men
I didn't like the crunchiness of these at first but after letting them sit for a day they were softer and delicious. The butterscotch gave it a nice flavor. Gingerbread isn't my favorite cookie but these made me want more. My boyfriend took them to work and got rave reviews from his colleagues. I decorated mine with homemade icing and cinnamon dots for buttons and followed the recipe exactly.
