Mrs. Sigg's Fresh Pumpkin Pie

cooked my pumpkin a few days prior. I scooped the pumpkin and put it into a food processor. This worked great for the consistency of the pie. I did increase spices to 1T. as others suggested. Only 1 person thought it was too spicey. There was enough for 2 pies. I also didnt get a full 2 cups from my pumpkin. I gave the recipe 5 stars, but i'd give my pie 4 stars. I think I would like more pumpkin and less cloves (I used individual spices). Although I got 2 pies, the sweetness was perfect. Both pies were done in 50 minutes. They taste less spicey today, but they were still good last night.

Banana Crumb Muffins

I used 2T of coconut oil instead of of butter. I used 2 bananas and 4T of applesauce, like someone suggested. I added 1t of vanilla, and 1/8t of cloves, I think 1/4t would be even yummier. I like the cloves in the batter better than the cinnamon, adds more holiday kick. With more modifications/ adjustments these will be 5 stars. I added the crumb topping at 10 minutes, but next time I will add it around 7 minutes, because they were almost done cooking by 10 min. I will also reduce the total cook time to 15min. My oven had been on for a long time already, so maybe thats why they cooked so quickly. Walnuts are sooo good in these.

Quinoa Pilaf with Shredded Chicken

Yum! Make sure you rinse the quinoa before you cook it. I sauteed the veggies for 3 1/2 minutes, instead of 7. I didn't want them too over cooked. I didn't use sage, and I'm glad I didn't. Use some chicken thighs with this, it really makes a tastier dish. I cooked the chicken in veggie stock, saved the remaining liquid after they were done, and drizzled it into the pilaf with the chicken for the last step. It helped incorporate the chicken flavor through out, instead of just pilaf with some chicken stirred in. I did reduce it to 2 carrots instead of 3, and didn't notice a carrot shortage at all. I find that an initial rinse of quinoa in a pour spout measuring cup, then pouring it into a cheese cloth, making like a tennis ball shape with it, works fantasticly. Then I can strain it and squeeze it right under the water, it's very quick and effective. (I don't have a mesh screen) Just add a little more quinoa, to make up for what gets stuck in the cloth. Next time I'm going to add some curry, or maybe some coconut milk.

Big Soft Ginger Cookies

tasted and smelled delicious. the dough wasnt sticky for me, like others said. I did mix the heck out of the butter and sugar, before adding other ingredients. They rolled perfectly. I followed the recipe exactly as written- first time making this type of cookie. They did taste like butter, which I love, but was distracting from the rest of the cookie. Needs more molasses. Next time I'll incorporate others suggestions. I will up the molasses to 3T, instead of 2T.

Great basic recipe. Good as is, and easy to adapt. I suggest more cream cheese, or less butter. I added cinnamon, and it was delicious!

Gluten-free Peanut Butter Cookies

Very good. will make again. Mine did not run on pan, and they werent flat. They were mounds of yumminess. Lined a dark pan w/ parchment paper, easy to take off. With more experimenting, these will most likely be 5 stars. I recommend mixing the eggs first, then adding sugar and let them blend well before adding remaining ingredients. Also, if you have natural/unsweetened peanut butter, stick with measurement of sugar, even with some chocolate chips, it's not too sweet at all (and I usually scale back the sugar on everything I make). The batter tastes sweeter than the actual cookie.

Cinnamon Jumbles

Awesome! I made 1/4 of the recipe. I added a little more buttermilk until the consistency was more pancake like. I spooned half the batter into a circular dish. I sprinkled 1t cinnamon, 1 T sugar, 1/8 t nutmeg mixture. Then I poured the remaining batter on top. I baked it at 375 for 40-45 minutes. It was delicious. I will definitely make this over and over. Great presentation, the middle peaks and is puffy.

Butternut Squash Fries

Cut circles like someone suggested. Mixed 1tblsp of coconut oil w/ cinn,cloves and sugar. Baked for 25 min. some got a little crispy, i think it would turn out crispy w/ less coconut oil and longer time. Delicious!! Great possibilities, tastes like pie.

Sticky Apple Biscuits

Delicious! I used gluten free flour, didn't have shortening, so i used more butter. It does leak honey out, which causes a sticky mess. They were not overly sweet, would be great with ice cream, but delicious alone too. They are so cute as well. I accidentally mixed the filling ingredients instead of layering them, but it didn't affect the taste. I will be making these again!

Cinnamon Sugar Biscotti

This wasn't that great. The biscotti was somewhat bland, usually our family gobbles up sweets, but these were slow to be eaten. I wouldn't make these again. It's not even a good base recipe to use.

Alfredo Sauce

Great recipe! I used half and half, and 2% milk. Everyone loved it, and commented specifically on how great the alfredo sauce was. Will definitely make again... Was a little grainy from the cheese not melting, but next time I will use fresh grated...

Flourless Chocolate Cake II

Delicious! I used 1/2 tsp. of vanilla, and 1/2 tsp of almond. So quick and simple to make. I used a recipe on here for the hard chocolate glaze. Tastes even better the next day, and cuts better/prettier about 6+ hrs after finished.

Butternut Squash Bisque

Delicious! I used more butternut squash, because I had some left over. I halved them, scooped them, and baked them for 45 min at 350- just until they were almost cooked, but still not completely done. I used half and half and 1% milk mixture. Excellent, I will definitely make it again, and everyone loved it, even my 2 year old son had seconds.
