Delicious Black Bean Burritos

Super easy and very delicious. I think it was ready in under 15 minutes. I didn't have the jalapenos, but can't wait to try it again when I do. This will be a staple in our house - our 2 year old scarfed them!

Four Cheese Macaroni

Absolutely amazing! Followed others' comments and doubled the cheese and used Pam instead of vegetable oil. Definitely not for calorie counters, but SO worth it! Made it for a dinner party, and everyone loved it - even the person who said she normally doesn't like homemade macaroni and cheese!

Chicken Parmigiana

This was so easy and so great. I followed a couple of other people's suggestions - put the chicken in the egg mixed with oregano, basil, and garlic powder and let it sit in that for about 30 minutes before coating them with the breadcrumbs. I also added parmesean cheese (el cheapo powdered stuff) and Adobo seasoning to the breadcrumbs and used Progresso Italian breadcrumbs. I was worried that between the herbs in the egg & the italian seasoning it would be too much, but it was AWESOME. Used Classico 4-cheese sauce and probably way too much cheese on top... mmmmmmm. Very delicious, I will be making this regularly!

Spinach and Strawberry Salad

This was absolutely delicious. I made it for Easter brunch, and everyone loved it. I did have outrageously good strawberries, so I'm sure that helped, but the dressing itself was awesome. I also added a package of glazed pecans (found in my produce section) and it gave it an awesome crunch. Very, very good.

Fresh Broccoli Salad

I usually don't like raw broccoli (love it cooked) at all, so I wasn't sure about this, but decided to give it a try as part of our Easter brunch. I was pleasantly surprised because that "raw broccoli flavor" that I usually dislike so much was totally not there! The one substitution that I made was that instead of making the dressing I used store-bought a Sweet Vidalia Onion dressing (I believe it was Ken's). Very good overall, and a great dish to take to a potluck (everybody liked it at Easter).

Brown Sugar Meatloaf

This meatloaf rocks the house! It is very easy to make, and even though I was unsure about some of the steps (ketchup on top of brown sugar, really???), I followed it to a T and it came out AWESOME. My husband even made it for us for dinner and he managed to make it perfectly (and that is saying something!). This will remain a family favorite for us. Thanks tangastar!!!

Swiss Cheese 'n' Onion Quiche

I just made this quiche for the second time, and both times it has been DELICIOUS. I added pre-cooked, cubed ham and I don't know if I would have liked it as much without it. The flavor of the ham just complements the onion and the swiss cheese so well. I also used fat free half & half and probably more than the recommended 2 cups of swiss (I just shredded a whole bar of the cheese). We had it for dinner and it was so good that 4 adults and one 2-year-old finished the entire thing!!! The flavor is so great, and EVERYONE I made this for (it was for a large family get-together last time) gave me rave reviews. This time it didn't have the dryness(not sure if I'm explaining this right) I would have liked (although the inserted knife did come out clean), but it was probably my fault because I was in a hurry for dinner to be ready and didn't let it stand for 10 minutes like the recipe says. Try it, you'll love it!!

Chicken and Bow Tie Pasta

I made this for two friends last night and they raved about it. It was not difficult, and had a great flavor. Substituting already minced garlic for the fresh kind made it much easier, too. This is a delicious, quick and easy dinner. Thanks!
