My favorite things to cook
Anything that is quick & easy, healthy (most of the time) and constitutes as "comfort food". I don't ask for much! :)
My favorite family cooking traditions
I love being in the kitchen with my kids (some days!) and having my entire family to my home for special occasion dinners (birthdays, holidays, etc.) is always a treat. It seems like we almost always have the same things, but are not afraid to throw a new recipe into the mix every once in a while.
My cooking triumphs
I love to mega-cook. I used to be more intentional about it. A girlfriend and I would get together and cook 60+ meals for our families in one day (30+ meals per family). With four kids, I'm not that organized, but still like to spend a half-day in the kitchen cooking up multiple meals that will freeze well and help me out when in a bind at meal-time for the weeks following.
My cooking tragedies
There are way too many than I can list here. :) I do wish I could cook without a recipe, but that's not me...doesn't matter if it's Duck ala Orange, Sloppy Joes or Mac & Cheese. I must have a recipe!

Slow Cooker Ham
This is the best ham I've ever made and it sure doesn't get any simpler than this! I made two hams for Easter - one with pineapple/orange juice and 7-up in the crock pot and this was the other one. They were the same ham, just cut in half and this recipe was way more moist than the other -- and the flavor was WONDERFUL, especially those super-sweet pieces from the bottom of the crock pot. Great recipe!!

BREAKSTONE'S Chicken and Sour Cream Enchiladas
I don't usually have much time to take for rating recipes, but this one was really good! They're a much healthier alternative to traditional enchiladas that are often soupy, greasy and loaded with unnecessary fat & calories. I used canned chicken to save time and added some black beans for added nutrition. Like one reviewer said, I loved how they weren't soggy and the filling was a great consistency. Don't forget to spray/grease your pan. Makes clean-up a cinch!

Baked Ham
YUM! I did this for Easter in the crockpot with a full can of Diet Coke (all I had in the house) and packed the top of the ham with some brown sugar. Everyone loved it!
