About this Cook
I am a stay at home mom to two little girls. This year my husband and I will have been married 5 years. We grew up in Florida, but since then have lived in California, Maryland, and now North Carolina. My husband is in the Marines, so we move around a lot. :) I spend my days enjoying my time with my daughters before they grow up too quickly.
My favorite things to cook
I love trying different recipes and experimenting. I cook a lot of pasta and olive oil type dinners, but I also love to cook Spanish recipes, Southern, and other types.
My cooking triumphs
As cheesy as it probably sounds. A long time ago I was so proud of myself for figure out how to make eggs over-easy. Any time I tried to cook them I would end up with either a scrambled mess or the yolk would be cook. Now years later every weekend my husband always wants eggs over-easy for breakfast.
My cooking tragedies
One Thanksgiving I was trying to have a Spanish theme for my husband. Making Spanish foods that his mom use to make him when he grew up. Everything turned out great, except, the puerto rican pasteles. They were so much work trying to make them. It took all day to make them and they turned out into a mushed mess. Never again will I try to conquer making pasteles.

Marinated Mushrooms II
I was really hoping to like these, but I didn't and neither did my husband. Too vinegary tasting. I think next time I'll cut back on the vinegar and try adding more herbs.

Sopapilla Cheesecake
SO DELICIOUS! I just made this for dessert and it was very easy to make and one of my favorite desserts now. I whipped the cream cheese filling for a while so that it whipped up very nicely and made a lot of filling. I melted the butter and poured it over the top layer and then sprinkled with sugar and cinnamon. Baked for 40 minutes in the oven. So easy, yet so very delicious. My husband even said that it was amazing and he'd be surprised if I don't eat it all tonight and leave him without any more. :) We gave a bite to our 1 year old and she also loved it.

Shredded French Dip
Excellent! I put this in the crock pot around 9am this morning and we had dinner at 5pm. The roast was so tender and it tasted fantastic. I added some oregano and garlic powder. I didn't add the beef bouillon. I also toasted the rolls in the oven for a few minutes. My husband thought this recipe was great also.
