I love GARLIC! Chopped, minced, roasted, you name it! I saw Bobby Flay (am I allowed to mention FN celebrities here?) chop some and then flatten the blade of his knife and scrape the garlic into a paste - wonderful! About this Cook
I am a single mother of 3 active children. We are on the go alot and I like to feed them good, healthy home cooked meals. I can't afford (health-wise or pocketbook) to eat fast food all week.
My favorite things to cook
I am always looking for recipes with garlic. I love garlic! Chopping garlic after a long day at work soothes me. I like to try new recipes. Any kind of recipe, appetizers, main dishes - crab dip, lasagne, spaghetti and homemade meatballs, garlic bread, salmon, taco salad...you name it!
My favorite family cooking traditions
My family doesn't really have any cooking traditions. I am trying to start some. My mother's food was always bland and my father's food was always too salty. I am trying to find that happy medium, where I don't have to use salt, but other spices that will make the dish flavorful but not salty.
My cooking triumphs
I am most happy when I make something (anything) that pleases the kids enough that they gobble it up. Most recently, I made Jambalaya, two versions: Spicy and not so spicy. Everybody loved it!
My cooking tragedies
I tend to take bits and pieces from different recipes and use what I have on hand from each recipe. They always come out tasty, but I forget to write down what I used from which recipe and then when I go to make that item again, I have to start all over! Ugh!

Brown Sugar Smokies
I've made these twice. Both times for a party. They were a big hit on both occasions. Both times I sliced the package of bacon in half and then rolled the sausages in a half piece of bacon. They fit perfectly, not too much excess bacon and there was no need for a toothpick. The other thing I did, by accident, was I left the wrapped sausages in a bag of brown sugar overnight. The sugars adhered to the bacon and then cooked up really nicely. I don't know if that makes any difference whatsoever. Anyway, excellent party fare.

Buffalo Chicken Dip
I substituted crumbled blue cheese for the ranch dressing. Gives it a little more kick. Delicious! my kids beg me to make this!

Sweet Potato Casserole I
This recipe has been in my family for @20 years (walnuts instead of pecans). I have loved it forever and we never had a real name for it. I lost the recipe and am so thankful for Allrecipes and its ingredient search!
