I am a single mother of 3 active children. We are on the go alot and I like to feed them good, healthy home cooked meals. I can't afford (health-wise and pocketbook) to eat fast food all week.
My favorite things to cook
I am always looking for recipes with garlic. I love garlic! I like to try new recipes. Any kind of recipe, appetizers, main dishes - crab dip, lasagne, spaghetti and homemade meatballs, garlic bread, salmon, taco salad...you name it!
My favorite family cooking traditions
My family doesn't really have any cooking traditions. I am trying to start some. My mother's food was always bland and my father's food was always too salty. I am trying to find that happy medium, where I don't have to use salt, but other spices that will make the dish flavorful but not salty.
My cooking triumphs
I am most happy when I make something (anything) that pleases the kids enough that they gobble it up. Most recently, I made Jambalaya, two versions: Spicy and not so spicy. Everybody loved it!
My cooking tragedies
I would say I'm still trying to perfect the fried pork chops. They always come out tough, not tender and juicy like others I've had.
