Easy Pumpkin Muffins

Othe people have debated whether or not to add eggs and oil to this recipe. I added one egg and a dash of oil because I wanted to make sure mine were a little fluffy but plenty moist. I also added some pinapple chunks (1 small can, well-drained) because I had them once in a delicious carrot muffin. These muffins came out great, except they were almost too moist! The pinapple did not add that much to the recipe, and since I wanted someting simple, I'll probably just leave it out next time instead of trying to cut the chunks smaller to make them work.

Mrs. Sigg's Snickerdoodles

Oh, Yummy! These are delicious! I followed the other reviews and only baked them for 8 minutes exactly and then put them on a cooling rack. They came out crisp on the outside and chewy in the center which I've always had trouble achieving before!

I've used this recipe three times, and have gotten rave reviews every time! The only change I make is adding a second teaspoon of vanilla.

Lemon Cream Cheese Frosting

I just whipped up a double batch for a lemon cake and it tastes delicious! Hopefully I'll have a little leftover for some cookies later in the week! :)

Easy Sugar Cookies

I just this recipe for a 4th of July barbeque. They came out delicious! I like my cookies a little moist and chewy, so I added 1/4 cup veggetable oil to the mix, as well as 1/2 tsp Almond Extract to boost the taste.

Southern Peach Cobbler

I tried this for a potluck, so I decided to increase the serving size to 12. I also used Del Monte's Orchard Select Peaches (jarred) which are amazing! The initial peach mixture had more liquid which I expected from canned peaches, but I added a little more cornstarch than called for, and sprinkled a couple handfuls of oats over the peaches to help soak up some juices. The breading soaked it all up nicely, and the whole dish came out moist and delicious! I got rave reviews at the potluck!

Fragrant Lemon Chicken

This was so easy to prepare and came out delicious! The apple flavored the meat more than I expected, but it was a great combination of flavors!
