Tender Italian Baked Chicken
We have made this recipe at least a dozen times in the past few months! The only change we make is to use Light Miracle Whip in place of the mayonnaise, due to personal preference, and it always turns out fork tender, moist, and delicious with whatever chicken we decide to use(breasts, thighs, bone-in, etc.)! It is an extremely quick and easy recipe to prepare, which makes it a plus for us. All three of our picky eaters get excited when they know we're having this for dinner, and there are NEVER any leftovers! Can't give it much more praise than that! Thanks so much for a terrific recipe!

Quick Quiche
My husband has prepared this dish several times for our family, and even with variations, it turns out great every time! He's made it with different cheeses, sausage instead of bacon, all veggies and no meat; each time, everyone enjoys it! The only real "change" he's made to the recipe is that he mixes and bakes everything in our cast-iron skillet, which results in a crispy, brown layer on the bottom. Quick, easy, and yummy!

Italian One Step Casserole
My husband made this for us and our three VERY picky children tonight. We all thought it tasted wonderful- the kids all had seconds, which is saying a lot, considering it was something different, and chock full of veggies they normally refuse to eat! It was very colorful and filling as well. The only change he made was to omit the carrots, as we didn't have any, and it was still fine. Hubby says the only thing keeping this from being a 5 star recipe was that he had to bake it over a half hour longer than specified to get all the veggies tender, however, this seemed to carmelize the onions, so it worked out well. Served with Italian bread, everyone left the table stuffed! Thanks for the recipe, it's a definite keeper!
