Boilermaker Tailgate Chili

Terrific recipe! Had to modify a bit for a contest I was in. Increased the tomatoes since beans were not allowed... added a little lime juice and adjusted the "heat" at the end with some Sriracha sauce. Best recipe I have found for chili!

Breakfast Pies

I made a "lite & easy" version, was SO easy and a big hit at the office. I simply precooked one chub of turkey breakfast sausage and soft scrambled one 15oz container of Southwestern Eggbeaters. I precooked the biscuit dough for about 4 min, then put a tsp+ of the sausage, then egg, then fine shred colbyjack and a little paprika. Cooked for 15 min. Really good and no chopping! Thanks for the great recipe!

Carnitas Filling

What a great way to create a base for meals. My favorite it is to omit the tomato and cumin, then add additonal broth, onion, carrots and celery. Once it is close to done I remove the meat and use the broth to cook spaetzle in. Makes a great pork stew.

Cathy's Banana Bread

I used 2/3 cup Tofutti sour supreme (can't have reg milk) and added 1 cup of walnuts. The color/texture/flavor was perfect! (even better day 2). I baked it in a four-loaf nordicware pan and they carried the design beautifully.

Salmon, Rice, and Fried Tomatoes

Great concept. My husband really loved it. It needed salt, and you could probably get creative with the spicing, but the combination of fresh tomato, rice and salmon really works as far as flavor/texture.

Portobello Mushroom Burgers

This was SO easy and tasty! I used fresh basil cut in small ribbons instead of the dried. I also had some garden tomatoes so I cut one in half and rolled it in the marinade and then grilled it cut side down first, then skin side down until the skin started to pull away. This was terrific with the mushrooms.
