Aztec Casserole

I made this with leftover turkey after Thanksgiving and it was delicious! I left out the corn and replaced with green chiles, and added olives to the mixture and on top too. Looked great and tasted better, Thanks.

Mom's Zucchini Bread

Reviewed: Aug. 21, 2006
Excellent texture and flavor! I used 1/2 vegetable oil and 1/2 olive oil, and sprinkled batter with cinnamon and sugar for a crunchy top. I also used Mexican vanilla which adds a unique flavor. I kept double checking the amounts of ingredients because the batter was so thick, but I got online and read some of the reviews and apparently this is normal and it thinned out as I mixed in the zucchini. My 10 year old son gave it a thumbs up, so it must be great!

Company Potatoes

Reviewed: Aug. 20, 2006
I took two batches of this to a church picnic/potluck and when I went back to get seconds it was GONE! I did make a few changes though. I used cream of chicken and cream of mushroom soup instead of celery and potato soup, and I also used about 4 cloves of garlic, and a little more cheese. I didn't use the dill weed since I didn't have any, but it wasn't lacking in taste. Delicious.

World's Best Lasagna

Reviewed: Nov. 13, 2005
I tried this recipe for guests that were coming over for dinner. It was a huge hit. Usually we just cook some hamburger and throw it into a jarred sauce on spaghetti night, but now that we have tried this lasagna, we have decided to use this sauce for spaghetti too. I will never buy sauce in a jar again, that's for sure. Thanks so much for the recipe, MissaRae
