About this Cook
I have been a stay at home mom for 33 yrs. I have 4 grown children, 4 grandchildren, and now I do home Day Care and Foster Care and have recently adopted a brother and sister (ages 4yrs 3yrs) that were previously my foster children. I have 2 dogs, 2 cats, 18 hens and 1 rooster. I enjoy quilting, cross-stitching, baking and taking walks in the woods with the kids and the dogs.
My favorite things to cook
Because my time in the kitchen right now is limited, I like fast, easy and kid friendly meals. When I have more time I like to bake bread, pies and cookies.
My favorite family cooking traditions
My sister-in-law and I share cooking for the holidays. I have a very large family and they usually all gather at whoevers turn it is for that holiday.
My cooking tragedies
Years ago when I was first married I put the Thanksgiving turkey out to thaw-for 3 days! I used to see my mother do the same but what I didn't realize at the time is that she also refrigerated it to thaw. When I opened up the plastic that enclosed the turkey I had a big, smelly surprise waiting for me!

Easy Skillet Ravioli
This is the same recipe that I found in a newspaper several years ago. I make this on a regular basis. It is so-o-o easy and very, very good. My kids LOVE it. The only thing that I have changed is that I use mini ravioli's and I don't use Ragu spaghetti sauce. I use whichever sauce I find on sale. The picture that is posted with this recipe does not look anything like this dish.

Rotini Pasta Bake
I guess it's about time that I rated this recipe since I've been using it for over a year!! I really love this pasta dish. It's easy to put together and it really stretches a pound of pasta when I have a bunch of hungry kids to feed (who are very happy when they find out we are having this). I did change just a couple of things. I omitted the onion because I'm too lazy to cut up an onion for just the few teaspoons called for in the recipe. I also omitted the salt and pepper because I didn't feel it needed it...I guess it depends on the flavor of which ever sauce you use. I lowered the temp of the oven to 350 degrees because it was sort of dry the first time I made it at 425 degrees. After I drain and rinse the pasta I put it back in the pan that I boiled it in, add the sauce and browned hamburg, then mix the whole thing together. I layer the pasta and cheese in an oblong casserole dish in the following way: 1/3 of the pasta mixture, 1/3 of the shredded mozzarella, another 1/3 of the pasta, followed by 1/3 of the cheese, then the last 1/3 of the pasta. I bake it for 20 min and then add the remaining cheese and return it to the oven for 5 minutes. It comes out almost like a "lazy man's" lasagne....YUMMY!!
