Puerto Rican Tostones (Fried Plantains)
This is a variant of a West African dish in which plantains are cut into 1/4 inch thick slices and fried. I find that using peanut oil gives a sweeter taste.

Egusi Soup
The use of pumkin seeds can be a useful substitute if Melon Seeds are not available, enabling an approximation of the flavour of this dish.
