Walnut Apple Bundt Cake
I made this cake last night and brought it to work this morning, much to the delight of my co-workers. Everyone loves it. The only change I made was to substitute almond extract for the vanilla. Gives it a great little flavor boost. Delicious!

Quinoa and Black Beans
I exchanged the onions for carmelized leeks and equaled out the corn and beans (1 15 oz. can of each) and this was delicious. I'll definitely make it again.

Stuffed Eggplant Parmesan
I left out the bread crumbs, made homemade tomato sauce beforehand, and added lots of mushrooms to the recipe (personal preference). Overall, this dish was delicious, though it took more than a half hour to bake - more along the lines of 45-50 minutes.
