Sweet Potato Potato Salad
This was very good! I used sweet onion and made sure to chop it VERY finely. No one (my kids!) could tell the onions were there but the flavor was wonderful with them. I also used Red potatoes and left the skin on. Wonderful. Was a hit with everyone, even my kids who dislike sweet potatoes in anything else!

Walnut Pumpkin Pie
YUM!! I made this exactly like the recipe except used a regular pastry crust. I saw that others used 2 eggs and most recipes call for more but I used the one. DELICIOUS! It was a major hit. Am making again for Christmas and it will definitely be a regular in our house!

Funnel Cakes III
Made this recipe for my kids last night and they were a hit! I did have to add more milk as it was a bit thick and I also added more sugar to make the batter a bit sweeter. With that they turned out just like the funnel cakes you get at the fairs/carnivals, etc! They were delicious and very easy to make.
