Black Bean Salad
Excellent! Even the picky eaters enjoyed it. Since kids were eating it, I only put in 1 jalapeno, but I would have liked it better with 2 or 3 for more heat.

King Ranch Chicken Casserole I
Doubled this recipe and two pans disappeared immediately. Everyone loved it. Didn't have the onion but it was still good.

Kay's Spaghetti and Lasagna Sauce
I will never buy sauce from a jar again. Easy and my whole family loved it. Used about one tablespoon of sugar instead of two.
