Basil Shrimp

Yum!!! I followed other's advice and lessened the amount of mustard, not sure if it would've been too much or not. I used this recipe for tailgating, so mixed the marinade in a ziplock and put the skewered shrimp in a different bag. I threw the shrimp in with the marinade as I was getting the grill ready, so not with it very long. I absolutely loved this and will be making it for our next tailgating party!

Parmesan Chicken

Yum and so easy. I used 4 thinly sliced chicken breast and followed others suggestion and dredged twice through egg and breadcrumbs before frying. I put a layer of tomato sauce in pan and the chx breasts on top with mozzarella on each. I baked at 400 for approx. 7 mins. Perfect and so easy!

My Crab Cakes

I loved these crab cakes!! I've never made them before and thought they came out great! I used 8 ou of lump crab and would try to use fresh as opposed to can, if you can get it. I also only used about 2/3 of the crackers as I that seemed to be enough. I also did not coat with breadcrumbs as there was no need in my opinion. I used the garlic/mayo dipping sauce mentioned in further down in the reviews. So easy!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

YUM!! I sauted the onions and then added two pork chops to the same pan. I sauteed for awhile and added two cloves of garlic and a chopped tomato. Cooked for about 5 mins and then added fresh chopped basil. Added about 2T of balsamic vinegar, let it heat up and yum!!! I will definitely be making this again!

This was so incredibly easy that I was embarrassed to pass on the recipe! Next time I will add more broth so that the meet is covered. Also, I think the key is the BBQ sauce.

Quinoa Tabbouleh

YUM!! This does make a lot and since I'm single, I will be eating it all week. I used fresh basil instead of parsley since I bought for another recipe. I also added 2 cloves of fresh garlic and 1/2 a can of chickpeas, since I love those. I think I will sprinkle some feta on it for lunch tomorrow. This is my first time making quinoa and I'm very happy with this recipe. I've actually made pretty much the same thing in the summer using whole wheat rotini.

Kathy's Roast and Vegetables

I used a 1.75lb piece of london broil and as suggested, I browned it first. Not sure if that matters or not. I added 1 can cream of mushroom soup and the dry soup mile. I also poured in some red wine since I had a bottle open. I cut up onions and celery with the potatoes and carrots. I think I had this on high for at least 5 hours. I loved it since it was so easy and tasted yummy!

Salsa Chicken Burrito Filling

This was a good receipe but not spicy to me at all. I used chicken tenders which equaled 2 boneless breasts, 8oz tomato sauce, 1/4 salsa, 1/2 can refried beans. I also added but didn't measure, chili powder, cumin, garlic powder and hot red pepper. It was easy to throw it all in a pot on the stove and shredded fine. I ate it on top of brown rice.

Spicy Black Bean Cakes

I actually think these were like a 3 1/2. I don't know what I did wrong but they didn't have a ton of taste to me and didn't hold well together. I added red pepper flakes and extra cumin. The sour cream sauce is the best part. I'm going to go back and read the reviews b/c I want these to work!!

Slow Cooker Split Pea Sausage Soup

I loved this recipe!!! I followed other's advice and used 6 cups of chicken broth instead of the boullion and the remainder was water. I used Hillshire Farms spicy sausage and cut it into to pieces, probably only ended up using about 3/4 lb. I cooked on high for about 5 hours and low for one more hour. As others stated, about four hours in, it did seem like it wouldn't thicken but it did. I added marjoram, salt and garlic powder with about one hour left, which is what I always do with slow cookers. I think next time I will add about 1/4 of the bag maybe half way through to see if that has bigger pieces left. I will definitely be making this again!

Lemon Cream Puffs

I loved this and it was pretty easy, although it did seem to use up lots of utensils/pans. I don't know if I just put more in each puff but my ratio came out perfect, nothing left over, compared to other reviewers. I will definitely be making these again!

Slow Cooker Lentil and Ham Soup

YUM, this was great and healthy!! I used a 28ou can of stewed tomatoes and enough chicken broth to cover (not sure how much it ended up being). I also added 3 smoked ham hocks, which I think really upped the flavor on this. I cooked on high for 5 hours. I know you're not supposed to take the cover off a slow cooker but I noticed the liquid seemed low, so I added about 1 cup of water maybe in the last hour. I also added the dried spices at that time, which is what I always do. I will definitely be making this all winter!

Chocolate Caramel Brownies

These were a huge hit at a cookout this weekend!! I screwed up and forgot to add the milk to the caramels but everything turned out fine. I melted the caramels in the microwave with 1 Tablespoon of water. I also did not add any nuts since some people don't like them. Other than that, I followed recipe. These were very gooey, so I put them in the fridge for a bit but then they were hard to cut. I think next time I'll line the pan with wax paper so I can just pull them out and cut on a cutting board. I will definitely make these again!

Spaghetti Squash I

Loved this!!! I've never made this and it was so yummy. I think I overcooked because it was mushy, not stringy like spaghetti (if that's what it was supposed to look like). I didn't use olives since I don't like them and added a zucchini. I also used a can of diced tomatoes since fresh tomatoes are scary these days. I'm making this tonight for the 2nd time in two weeks. Perfect for weight watchers too!!

Steak Tip Marinade

I thought this was great! I used fat free Wishbone Italian dressing, Jack Daniels barbeque sauce, 1 clove of garlic and spicy steak seasoning. I had two pounds of steak tips and marinated them for a few hours. I broiled instead of grilled and will be cooking these again!

White Chocolate Fruit Tart

This was amazing!!! I made it for Christmas and even with all the other food available, everyone wanted this. I used a 10 inch springform pan, which worked perfect. After reading reviews, I didn't bother with the glaze and used pineapple, raspberrys, mandarin oranges and kiwi. I will definitely make this again!

Split Pea Soup

YUM!!! I added everything to my crockpot and cooked on high for 5 hours. I used 1 pint water and 1 pint chicken stock, an apple smoked ham steak, one potato, one onion and carrots. I think the crockpot must keep it from getting too thick b/c I'm surprised that people had issues with the thickness. I took out the ham and blended it all with a stick blender. I will definitely make this again, as it was so easy!

Zucchini Patties

These were really tasty after adding more spices. I used one fairly small zucchini, and cut the rest in half. I also added Lowrey's season salt, garlic powder and a dash of red pepper. I threw the zucchini in my food processor for a quick chopping and I guess I should have let it sit in a strainer for awhile as these ended up being very wet and when I flipped them, they fell apart. They still tasted great but need to get rid of the liquid. Update: I tried using less egg but they still fell apart. Anyone have any advice??
