Pumpkin Chocolate Chip Muffins
I was looking for a super healthy muffin recipe that i make for breakfast time, and I found this one. I changed the recipe around a bit to make it even healthier, and they were still delicious. First of all, I didn't add any chocolate chips to the muffins since I didn't want the extra sugar. I used equal portions of white and whole wheat flour this time, but will try to use all whole wheat flour next time. I substituted the white sugar with brown, and used only 3/4 cups. I didn't want to add oil in the recipe, so I increased the amount of applesauce by 1/4 cup. I used three eggs in total, since I didn't want to use egg substitutes. I might have made these muffins lower in fat and calories but they were still moist and yummy. The pumpkin added tons of flavor!
