Chicken Makhani (Indian Butter Chicken)

We loved this recipe. It is time consuming, but worth it. I used chicken breasts and also used the cashew paste as recommended. It definitely adds depth to the recipe unlike cornstarch. This one is going into the rotation!

Sweet Potato Pecan Waffles

These were good, but I do not think that I will be making them again. The batter is a bit more watery than your typical waffle batter, so be sure to cook them longer than usual.

Mother's Ham Casserole

The main reason that I am impressed with this casserole is because it does not contain a condensed soup as an ingredient. By making the sauce yourself you can really cut down on the salt and fat by using your preferred ingredients. I think this is a great base recipe that you can really alter to your own needs. We didn't have any leftovers.

Aunt Kate's Green Beans in Tomatoes

These were outstanding. I had diced tomatoes but no tomato sauce, so when the dish inevitably got a bit dry while cooking, I added some red wine. That made it even more amazing. Highly recommended.

Potato Lasagna

I looked at all of the reviews prior to making this. You do not need to cook the potatoes beforehand provided you slice them thinly (I used my mandolin) and you bake the dish a bit longer (I did 1 hour covered, 15 minutes uncovered). I also wouldn't use red potatoes since they don't get quite as soft as other types. I mixed some seasonings into the vegetable mixture (oregano, parsley, garlic, salt and pepper) and used a basil tomato sauce. It was outstanding. Thanks for the concept!

White Chili with Ground Turkey

This recipe is extremely bland as written. We had to quadruple the spices and only then did it have some flavor... and it really wasn't that great of a flavor. I know there are far better white chili recipes out there.

Spinach Corn Muffins

The previous reviewers said this was either too sweet or too bland. So to solve these issues, I used a cornbread mix that didn't have as much sugar as this recipe calls for and added some cumin, chili powder, salt and pepper to the recipe. The muffins are fantastic with these adjustments!

Slow Cooker Venison Stroganoff

This was our first venison recipe ever... we wanted to ease ourselves into it. It was delicious. We used light sour cream, which is perhaps why it came out really thin. It was quickly resolved with some cornstarch. The recipe makes a ton of sauce. We had enough for two dinners, two lunches, and a container to freeze. Thanks for the recipe!

Creamy Blueberry Pie

We picked ten pounds of blueberries this summer. When we came home, I immediately found this recipe and made one. With all of the blueberries sitting in the freezer, it is a permanent addition to the repertoire now. My mother-in-law has even given her stamp of approval on this one.

Autumn Acorn Squash

This was a really great, healthy way to use an acorn squash, getting away from the brown sugar recipes out there. It was an entire meal for my husband and myself. I did not have cardamom on hand, so I left that out, but otherwise followed the recipe. It came out a bit dry, so I will add some light butter to the edges of the squash and the mixture next time

Chicken Tortilla Soup IV

Overall, this is a great, quick soup. If your salsa has a lot of kick, then you won't need to add any additional heat to the soup, but if you have a medium/mild salsa like I had on hand, you might want to add a jalapeno or a couple dashes of hot sauce for some more kick.

Apple Banana Cupcakes

Definitely muffins in my book, but delicious ones! I used Smart Balance instead of shortening and whole wheat flour instead of white. I also subbed some brown sugar for white sugar, since this recipe really seemed like it should be in there! These are really good. I am glad I got the baking bug tonight!

This was really good. I really think this is a meal in and of itself. It's not just another side dish. I used turkey bacon and balsamic vinegar. Next time I will add more onion for more contrast.
