Tarragon Chicken Salad

Makes an excellent sandwich filling too! Didn't have enough fresh tarragon, so I added dry tarragon to the mix and it's just wonderful and so easy to make.

Orange Honey Garlic Chicken

It seemed more soy sauce than orange and honey. That however, could be because as Asians, our standard soy sauce is stronger in intensity than Western soy sauces, I think. Other than that warning, quite an easy recipe to make, with ingredients that are relatively affordable worldwide.

Pineapple and Banana Smoothie

Cottontail Carrots

It took a while to cut up that many carrots (I'm a lazy gal) but worth all the effort. It's so quick and easy. I had to be at a family gathering at 7p.m. So I started cutting up the carrots at 6 and in half an hour I was in the car and on my way with hot carrots to serve. They kept eating the carrots long into the night because it was good with the rice and chicken that was served for dinner, and it was just as good as a snack later!

Roast Beef Sandwich Spread

I used canned corned beef to substitute the roast beef (didn't add salt, of course!) and my husband insisted on using Worcestershire sauce, so I didn't put in the pickle juice. My husband loves beef but most of my beef dishes are too hot for lunch. This spread was a marvelously cool beefy meal on a hot summer day, so both my husband and I were very happy with it!
