Slow Cooker Lancaster County Pork and Sauerkraut

Oh, this was so good! I mixed the sauerkraut with the brown sugar, a dash of BBQ sauce, and some leftover cut-up cabbage. I put half of that on the bottom of the crockpot and then put the still frozen pork loin in and the rest of the sauerkraut mixture on top. Then I poured a whole bottle of beer in. I turned it on low before going to bed and let it cook all night and all the next day. It was perfect and perfectly moist too! Definitely a keeper.

Chicken Teriyaki with Asparagus

This was really, really good! I put it in a crock pot, added some extra wine and placed the asparagus on top. Left off the cheese. It was delicious!

Apple, Pecan, Cranberry, and Avocado Spinach Salad with Balsamic Dressing

Oh, this is a keeper! Loved the variety of flavors. I didn't put in carrots, but did add some diced Swiss cheese and also used Raspberry-Walnut vinaigrette. Next time I will try substituting the spinach for broccoli.

I forgot to add some extra milk so it was borderline dry, but it was so so good. Made it with peaches and blueberries for a big crowd and they all loved it.

Chicken Marsala

This was very good and everyone liked it for Easter dinner. I would not flour it next time, however. That is not necessary at all. Also, I thickened it with corn starch as some other reviewers suggested so I could serve it over pasta, but I would not do that again either since I thought it detracted from the taste. I used lots of mushrooms and some onions and they were really great.

Caribbean Sweet Potato Salad

This was just fabulous. Instead of boiling the potatoes, I cut them up (used 1 white and 2 sweet) in bite-sized chunks, put them in one layer in a glass casserole dish, covered with water and microwaved for 8 minutes. I followed the rest of the recipe exactly and it was even better than I had hoped!

Simply Divine Meat Loaf with Spinach

This was a wonderful alternate no-tomato-sauce meatloaf recipe. I am very glad I read the reviews saying to cut the onion soup mix. Even with half a pouch added, it was close to being too salty. Next time I will try a sprinkle of garlic or onion powder instead. Loved the spinach in it!

Cool Watermelon Slushes

Instead of using ice cubes, I blended in frozen strawberries with the watermelon. Didn't add any honey or sweetener, but did add a small amount of 7Up. Delish!

Garlic-Lime Pork Chops

Wow, how nice to find a pork chop recipe that doesn't require cream of mushroom soup or fruit. I didn't have time to marinate, so I poured the mixture over the pork chops and baked at 350 for an hour. They were superb! I also did not have a lime, so substituted lemon juice and did not have any peel. I will certainly use this recipe a lot.

Marrakesh Vegetable Curry

My family absolutely loved this! I needed to use up a lot of vegetables since we'll be going on vacation and this was perfect. I also added mushrooms and jalapeno peppers but sweet potatoes aren't in season so didn't use those. I'm sure I'll be making this a lot!

Three-Cheese Spaghetti Bake

Oh my! This was SO good. Instead of using spaghetti noodles though, I used shredded (cooked) spaghetti squash. I just placed them on the bottom, mixed the other ingredients, added some cooked ground beef I'd had left from the day before and did everything else the same. It was absolutely delicious!

Hearty Black-Eyed Pea Salad

I had great hopes for this salad on New Year's Day but it fell flat with family and friends. The carrots added crunch, but perhaps some celery would have helped. Probably should have added more hot sauce as well or maybe some salsa.
