Spinach Pasta Salad

I brought this to a potluck for my running club and watched it disappear. I used whole wheat corkscrew pasta, however, and it added a nice texture. Use the biggest bowl you have to mix--until the spinach breaks down in the dressing the volume is enormous.

Banana Oatmeal Crumb Cake

This is a good alternative to banana bread when your bananas ripen too quickly. It's especially good when served warm with a little ice cream on the side.

This needs LOTS of stirring--stir until it has no hint of gloss, not until it begins to lose its gloss. The taste is great though.

Casablanca Chili

I used my homemade mango chutney, so perhaps it's sweeter than commercially prepared stuff; I'd suggest omitting the brown sugar to cut down on the sweetness. My husband & I liked this with warmed pita bread.

Al's Rum Chicken

Had to cook this about 15 minutes longer than the recipe stated. The ingredients list sweet and sour sauce, but nowhere in the body of the recipe is the sauce mentioned. Not a keeper recipe.
