After spending 20 years as a single parent, I met my husband Steve over the internet - BEFORE it became fashionable. We married in 2000 and I moved to Australia for 5 years. We returned to Salem in 2005 and we both now work for the State of Oregon
My favorite things to cook
I make a killer Prime Rib in a salt cave. I treat most of my fresh vegetables to Asian methods of cooking and combinations. I love a good homemade soup, stew and spagetti sauce, although not all together....lol. During the week we have a lot of salads that combine fresh vegetables with some form of meat, mostly ground turkey or grilled chicken as a main dish salad, even in winter.
My favorite family cooking traditions
The aforementioned Prime Rig in a salt cave is an every Christmas Day tradition at our house. I also make homemade egg noodles, a tradition my grandmother started when she was young, to add to the turkey broth from the neck as a side dish at Thanksgiving.
My cooking triumphs
Again, the Prime Rib - I make a mean Pacific Coast chowder that has won a second in a cooking contest and has been published in a national magazine and a local cookbook.
My cooking tragedies
Once when I was home with pneumonia, I made a terrific soup from lots of left over meat and veggies from the fridge. Fell asleep while it simmered and it burned! It took a while to get the smell to dissipate since it was snowing out and I, being sick, couldn't open up all the windows and doors!
