About this Cook
I'm 29 and engaged to be married. We live downtown with our dog and I try to cook for us 4 nights a week, as eating out in Chicago can be expensive.
My cooking triumphs
Oatmeal butterscotch cookies and after a few trys, spagetti carbonara.
My cooking tragedies
Eggplant parm. I just can't get it right. A few times it was even inedible. My fiance just assumes we're ordering pizza when he sees me with an eggplant. ha!

Butter Chickpea Curry
we really liked this. we'll make it again. I served it with uncle bends jasmine ready rice and some warmed whole grain pita bread.

Veggie Lasagna
better than I thought it would be! I chopped the carrots and broc. in the blender while still frozen because my DH hates big pieces of broc. Subbed one can of broc and cheese soup for one of the mushroom soups as another reviewer suggested. yummy! I also used the no boil noodles like another reviewer suggested and that cut down on the prep time. (Just make sure you cover those noodles with sauce or they come out a little crunchy on the corners).
