Jamie's Minestrone

Reviewed: Jun. 22, 2008
Great recipe! I feel the need to point out the nutrition error in a previous review. I am a dietician and Jamie's recipe is very healthy. I subbed whole wheat pasta and used low-sodium broth and tomatoes, rinsed the beans before adding to the soup and use fresh or frozen veggies. I don't know where the reviewer got some of the numbers but I just made the soup and can say that the sodium is NO WHERE near 1267 per serving (when using lower sodium products). Fresh is ALWAYS better than canned and pre-made. Great soup Jamie!

Old Fashioned Mac and Cheese

The only reson that I did not give 5 stars is becuse I changed a few things. I used Barilla pluss noodles, whole wheat flour, added a few dashes of hot sauce, werchester (sp?), and a small suirt of mustard. Finally I mixed some left over provalone and munster slices.

Sunday Brunch Casserole

So good! I did change a few things. That is the only reason that I did not give it 5 stars. I cooked sausage and bacon till crisp, mixed them with O’Brian potatoes, the eggs, milk and cheese. I seasoned the egg mix and baked in a casserole dish. I t needed to cook a little longer than stated, but it was so good! Thank you!

Sugar Cookie Icing

Great! I added a little melted butter for flavor and to thin it out a little. I did not have almond extract, so I used a little vanilla. I suck at making frosting, but this turned out great! It did not dry out as others have stated, but this coud be due to the butter. It also took longer than expected to set up. From the reviwes it sounded like it was super fast. All areound great recipe!

Broccoli Cheese Soup V

Reviewed: Dec. 15, 2006
Great recipe! I did change a few things, like adding some mixed veggies along with the broccoli, using skim milk, whole wheat flour and using lower fat cheese. Next time I would use real cheese, becuse it did kind of taste like velveeta. I loved the ease of this soup, Thank you!

Jay's Hearty Breakfast Skillet

I got as far as browning the potatoes. It all went into a mush at the bottom of the pan, and my potatoes were only par cooked! Half an hour later I gave up and added the rest of the stuff. Gotta say, it was still tasty, it just looked kinda icky.
