Slow-Cooker Chicken Tortilla Soup
This was fantastic. I didn't use the slow cooker, and used chopped rotisserie chicken to save time. I added a can of rinsed black beans and 16 oz of frozen corn, and used a 15 oz can of green chile enchilada sauce. I just topped with tortilla chips to save time and energy -- it was a big hit! Adding this to my recipe box.

Cucumber and Tomato Salad
Super easy to make - I used two cucumbers, four tomatoes, 1/2 red onion and instead of tofu, used herbed feta cheese. Drizzled Newman's Own Balsamic Vinaigrette over the top and tossed. I was unsure about the kidney beans but we tried it and was a hit! Might also try kalamata olives next time for a more Greek-style salad with the feta.

Garlic Chicken Fried Chicken
Great -- I loved the garlic. I did cut down on the salt and pepper by 1/2 tsp each, and added about 1 tsp of Lowry's seasoning salt. Make sure the heat isn't turned up too high -- medium low was hot enough on my stove. Any hotter and the breading will get too dark without cooking the inside of the chicken. Definitely a keeper! Used chicken tenders and put it on a salad, made a dressing of sour cream, lemon juice, hot sauce & bleu cheese. Perfect!
