Eclair Cake

Love it! Much better the next day because the graham crackers are soft. For the best variation, try melting semi sweet chocolate for the top instead of frosting. Yum yum!

Cream Cheese Apple Muffins

These are amazing muffins! It has been three days since I made them, and they are still chewy and soo tasky! For cinnamon lovers: try putting a teaspoon of cinnamon in the dry ingredients. Mmm!!

Grandma Johnson's Scones

Deelish! I just put the leftovers away, and know that they will be a great pick-me-up for my co-workers tomorrow morning! I made this recipe my own by taking others advice to use 1c whole wheat flour and 3c all-purpose, and also to add 1 tsp. cinnamon, and 1 tsp. vanilla (added with the egg). I made it "lighter" by ony 1/2c sugar, l. cream cheese for half the butter, and fat free sour cream. I also added 1/8 tsp. nutmeg to everything from research on scones. For high altitute baking, I added another egg (can also do egg substitute), and subtracted a couple tablespoons of flour. I then split the dough in half and added raisins, soaked in hot water for five minutes and coated with cinnamon and sugar, to half. To the other half, I added chopped up walnuts and chocolate chips. Both are wonderful! I then brushed milk on the tops, and sprinkled on cinnamon/sugar before baking. Thanks Grandma Johnson! :0)

Black Bean Hummus

Absolutely great! Goes well on whole wheat crackers, and is really good mixed with ricotta cheese - maybe even on tortillas! TMy roommates all loved this recipe. I loved it because it is simple enough to be made without a food processor if you heat the beans and mash everything with a potatoe masher or pastry blender!

Baked Stuffed Winter Squash

Great! I accidentally turned off the oven after the squash was cooked, but the last twenty minutes was sped up in the microwave. I also made my own bread crumbs by putting scraps of bread in the saute pan with some butter and thyme. I will be making this again!

Mediterranean Salmon Cakes with Cucumber Sauce

I really enjoyed this recipe - although I really made it my own! I used leftover blackened salmon as the base, and made my own bread crumbs by microwaving a piece of bread with butter, garlic salt, and bruschetta for 1 minute. (Careful not to burn; i did that too! :0) I then mixed the salmon, parsley, egg, and bread crumbs along with some spinach. I made the sauce with sour cream cause i didn't have yogurt, and ate the cakes with the sauce and fresh cucumbers and tomatoes with salt and pepper. It was excellent and would go great in a pita! Mmmm...

Scottish Oat Scones

What a great recipe! I just devoured a few (too many :0) after they came right out of the oven. Mmmm... I did change a few things after reading some of the reviews and added 1 tsp. of cinnamon, substituted organic white wheat flour for all of the regular flour, and used quick cooking oats. I also found that cooking them on a baking stone worked well and was careful not to overbake them. The result is wonderful! I am thinking of making them for my coworkers and think that I will use applesause in place of some of the butter to make them a little healthier and I may try using chocolate chips instead of currants. Can't wait to make these again! :0)
