Real Mississippi Mud Pie
This was absolutely fabulous. I followed others recommendations and added 1 tsp. of instant coffee, 1 tsp. of vanilla and dusted the nuts with flour. For my own personal taste I used (4) squares of semi-sweet chocolate and (2) squares of bittersweet. It was dark, rich and decadent. I also served it with fresh sweetened whipped cream. Will be making it with pecans today, may try it with macadamia nuts too.

Skillet Chicken Cordon Bleu
This was fabulous although I tweaked it some - I dredged the chicken in Italian bread crumbs before cooking and browned in 1/2 c. butter (draining off when chicken was browned.) I added 1/2 c. white wine, and 2-3 tbs. of heavy cream which added richness to the sauce. I also added a can of sliced mushrooms. I put the chicken in a casserole dish, poured the sauce over it and instead of adding the Swiss cheese to the sauce I sprinkled it on top and finished in a 325 oven for about 15 minutes. My daughter and her friend raved about how good it was. It's definitely a keeper for me!

Breakfast Casserole I
This was a great, easy and tasty recipe. I used Gruyere cheese instead of cheddar, 1/2 and 1/2 instead of milk and added some caramelized shallots for extra flavor. I also added about 1/2 cup of mayo to the egg mixture. Certainly not low in fat or calories but worth it for the taste and texture. I brought it to a brunch and everyone raved.
