Pineapple Casserole II

This was just 'okay' for me. It is really sweet and seems to have too much butter. It turned out a little soupy even though I drained the pineapple well. Won't make this one again.

This recipe is delicious and easy. They worked well in my cookie press. I doubled the amount of almond and they tasted perfect! We dipped the bottom portion of some into melted dark chocolate and that coupled with the subtle almond flavor was really good.

These were good. However, I am rating them only four stars because the chocolate took longer to melt than recipe stated. Also, I've found usind a double boiler and using a bit of grated wax, rather than shortening works better. The chocolate will be thinner and set more quickly. If you roll the balls then put in the freezer rather than the fridge, it will also make them set up for easier dipping.

Truck-Stop Buttermilk Pancakes

These pancakes are really good. The entire family loved them. Be warned that this recipe makes a TON of batter! I reduced the recipe to feed 4 and still had lots of leftovers. Good news is the leftovers freeze well for a speedy breakfast on a weekday.

Creamy Pimento Cheese

This is so good! I added a pinch of cayenne pepper for a bit of heat. I love this recipe since it has no "processed cheese food" in the ingredients.

Easy Slow Cooker Meatballs

This recipe was just 'okay.' It was not very flavorful- pretty bland, actually. I give it two stars only for the ease of preparation. My husband said "something is missing" and I have to agree. I will stick with my own meatball recipe. It takes longer, but tastes much better.

Mexican Rice II

Terrific! I did not have garlic salt, so I used 1 tsp salt and 2 crushed cloves of garlic. Not overly spicy, it was a great compliment to our soft taco bar. Even the kids loved it!

Hobo Dinner

This was okay. I made a couple changes the second time around. I dipped the meat patties into dry onion soup mix and omitted the onion and salt. I sliced the potatoes rather than chopping. I layered them over and under the meat patties. I sprinkled coarsely crushed pepper over the top of the carrots. We like dipping these in steak sauce. Yummy!

Mom's Zucchini Bread

This recipe is delicious! I tripled the recipe for family and friends (thanks to mom's over abundant garden). I cut the sugar to only 2 cups, and will probably use less next time. I subbed chopped pecans since that's what I had on hand.

Roasted New Potatoes

These potatoes were so yummy! I made enough for 15 servings. I subbed Pampered Chef Rosemary & Herb seasoning for the rosemary/thyme. I used coarse salt & pepper. I had several recipe requests and will make this again!

The Best Meatloaf

This recipe was pretty good. I left out the bell pepper as hubby hates peppers. It had a great flavor that I attribute to my own steak sauce (a mixture of bbq sauce, soy, worchestershire, and hot sauce). I'm rating it only four because it took longer to cook than the recipe states. It took an hour and a half, so dinner was later than usual. Will make this again.

Oven Roasted Potatoes

Cookie Balls

These are really easy and so yummy! I use my food processor to crush the oreos. I roll into balls and place in freezer for about 10 minutes before dipping into chocolate. I love these dipped in dark chocolate, then drizzeled with white chocolate or sprinkled with extra oreo crumbs.

Jen's Heavenly Egg Salad

Delish! I love the fresh lemon juice in this recipe. The cooking method for boiling the eggs doesn't work for me. I boil them for 8 minutes on a low boil, then stick in an ice bath while I mixed the other ingredients. Great on whole wheat bread. Will make again!
