Lime Chicken Soft Tacos

We loved this. We had to use steak because our grocery was out of chicken. Yep, you heard that right...and for the 2nd day in a row. We changed just a couple of things: skipped the oregano and added about a 1/2 tsp. chili powder (really gave it a nice flavor). I think this would be good with just about any meat.

Becca's Bruschetta

This was the most delicious bruschetta I have ever eaten!!! I made it for a party and everyone commented about how delish it was. The only thing I added was a little balsamic glaze drizzled on top at the end before putting it in the oven just because I had that on hand. Can't wait to have an excuse to make this again!

Seared Sea Scallops

This was very good. It made a nice crust on the outside. We had a mushroom creamy pasta on the side and that was a perfect combination. We'll definitely make again.

Cuban Shredded Pork

Wow this was so delicious. So much flavor in every bite. We didn't change the recipe. Just added some shredded cheese and salsa at the end which I think was a great addition. Can't wait to make this again!

Beef Tenderloin in a Port Shiitake Reduction

We didn't even have the right amount of port and this turned out awesome!! I'm not a huge mushroom fan and the shiitake really added a nice texture and soaked in the yummy sauce. I'm also not a big meat eater but I couldn't get enough! My husband was also very impressed. We will definitely make this again. We didn't cook the reduction for the full 30 minutes as we had less port than called for and it seemed to reduce really fast.

Ultimate Shrimp Scampi

Surprisingly, this turned out delicious despite not having garlic or asiago. So we can't wait to try this with both. We used garlic powder since we somehow didn't have garlic cloves in the frig. The sauce was wonderful.

Korean BBQ Chicken Marinade

This was great! We love the flavor. I used orange juice instead of concentrate and doubled it like someone else said. Loved that orange flavor. We marinated it overnight with the lemon and it seemed fine. We had it with brown rice and salad. Nice, healthy, quick meal!

Garlic Cheese Grits with Shrimp

We love this. We make it probably a few times a month. I put a lot of tomatoes in there because I really like the sweetness with the shrimp and it makes more of a sauce that I pour over the grits. We usually use pepper cheese because we like the hotness.

Basil Chicken over Angel Hair

This had a lot more flavor than I was expecting. Next time I make this I'll try to make a little more sauce. We used chopped grape tomatoes and a little bit of canned diced tomatoes. Next time I won't drain the can. Definitely recommend this for a light dinner.

Red Bell Pepper Coulis

We didn't get why this was rated 5 stars so many times. Maybe I did something wrong? I used garlic instead of shallots but besides that we did everything according to the recipe. We don't have a blender so we used a mini food processor which made it pretty smooth. I think the main thing we didn't like was that it had little flavor. We put it over Orange Roughy. It needs something but I don't know what.

Italian Spaghetti Sauce with Meatballs

I didn't know spaghetti and meatballs could taste so good. We didn't change the recipe at all. Just let it simmer for an hour before putting the beef in because we were starving. So definitely start this one early. We did put the beef in raw with the sauce which seemed a little strange but my BF insisted. It was absolutely delicious. I ate it again the next day for lunch. We just made this for a 2nd time. We used a different brand of whole tomatoes and the sauce came out pretty thin. Not sure if it was that brand or what. But it still tasted great!

Catherine's Spicy Chicken Soup

The fact that we, very amateur cooks, could make this and it turned our divine is a testament to how amazing this recipe is. We couldn't get enough of it. And knowing it was healthy made it taste even better (although it's very hard to believe how healthy it is since it tastes so good). We used petite cut zesty tomatoes for the peeled and diced and medium hot chili beans. Also used a medium salsa. The spicyness was perfect. Not sure if you need the whole tomatoes?? Maybe that's a very amateur thing to say. But not sure how they added anything except that they looked pretty. We also cut this recipe down to 3 servings and it fed my very hungry fiancé and I with enough for one serving of leftovers. THANKS FOR THIS RECIPE!

Red Skinned Potato Salad

Wow! This was a huge hit at my friends' cookout. I thought we had twice as much as we needed but there was only scoop left at the end! I added paprika and cayenne pepper, definitely think it needs that. I thought it might have had one too many eggs but several people said the amount of eggs was perfect. Yum, will definitely make this again.

Charbroiled Salmon

This was delicious! I marinated it for about 5 hours. Added a little lemon juice and right before grilling it added a little garlic. We loved the crispy outside. It had so much flavor! We had broccoli and cajun seasoned potato wedges on the side. Yum!

Glenn's Marinated Pork Shoulder

We LOVED this marinade. We almost didn't make it because of all the ingredients but did a little substitution and it still came out absolutely delicious. We used honey instead of molasses and red wine vinegar instead of white because that's what we had on hand. We grilled it too. We'll definitely be making this again!!

Mushroom Pork Chops
