Easy Swedish Apple Pie

My family loved it at Thanksgiving. Made it gluten free, and was a little concerned by how it looked, but that is not the recipe's fault. Seems like a pretty solid variation to apple pie.

Candy Cane Cookies III

Pretty good, and just like I remember as a kid! Not too sweet, which is nice. We sprinkled the crushed candy canes and sugar instead of rolling it, but I still think they turned out great! Love the peppermint extract in it.

Oatmeal Waffles

Very good! I thinned it out a little too much after I cooked the first waffle. Need to remember that a little thicker batter is perfect. Very excited to find a healthier waffle/pancake recipe that actually tastes good. I feel better about feeding my daughter something like this!

Candied Carrots

Excellent! I made these tonight for my husband and 15-month-old daughter. I hadn't fed her carrots successfully in a while, and I don't make them very often because I don't usually like carrots. She loved them, and so did both of us adults! Not too sweet, which is an added bonus.

Easiest Peanut Butter Fudge

My new peanut butter fudge recipe. I was looking for a good, fairly easy peanut butter fudge recipe that didn't call for marshmallow creme. This is perfect. I used my stand mixer - much easier than using a hand mixer to combine everything.

Apple Butter II

WOW! This is really, really good and so easy! I didn't change a thing except I cooked it uncovered in my slow cooker (on high). Made the house smell amazing! I may never buy apple butter again.

Pumpkin Butter

I had never tried pumpkin butter before. It will definitely be in stock during the fall and holiday season. Might consider giving it for gifts, too. Didn't change any of the ingredients. Just let it cook in the slow cooker and make my house smell amazing.

Blueberry Pie

Yum! I made a couple of small changes. Used 1 Tbsp cornstartch per cup of berries. Might have been able to use just a tad more. Also used 1 c sugar. Very good summer treat.
