Marrakesh Vegetable Curry

Really, really good! I omitted the eggplant (didn't have one on hand) and increased the curry powder as others noted. I used 2 cans of garbanzo beans. So flavorful and made a lot! It reheated well for lunch the next day. Will definitely make this again!

Spaghetti Squash I

I've never been much of a squash fan, but I really, really like this! I used what I had in the house: sun dried tomatoes, feta, an entire small can of sliced black olives, a dash of olive oil, and fresh basil. I forgot to saute any onion or garlic. Delicious! Full of veggies and healthy oils! This will be a regular at our house!

Pumpkin Cream Cheese Muffins

I made two small changes: I used pumpkin pie spice and cinnamon and I omitted the nuts. They were a big hit with my kids, husband, and co-workers! I got 24 muffins out of this recipe. I will be making them again!

Oatmeal Whole Wheat Quick Bread

Excellent! I made the recipe as written, including baking at 450. It turned out wonderful. We finished the loaf in one afternoon. I am so pleased to have found a whole grain quick bread without eggs (allergies) that actually tastes good. Thanks for the recipe!

Indian Dahl with Spinach

Baked Sweet Potatoes

Tasty taters! While the seasoning was just fine, I'll experiment with it a bit to find something that suits my taste a little more. Perhaps some cumin or cinnamon instead of the oregano. A good recipe to start with for a savory potato. Thanks!

Garden Fresh Tomato Soup

Delicious! After reading that so many left out the cloves, I decided to try them. I didn't have any whole cloves, so I added two dashes of ground cloves instead. I am so glad I tried it! The cloves add a subtle savory flavor without overpowering the tomato. I used 1 quart of home-canned tomato juice/sauce and veggie broth instead of chicken. I didn't think it needed any sugar at all and just a sprinkling of sea salt. Yummy! I'll definitely be making this again. As much as I like the cloves, the recipe is quite adaptable to season to your taste. Enjoy!

Figs and Toasted Almonds Brie

So good and so easy! I couldn't find fresh figs and used dried instead. I added enough water to cover the figs in a small saucepan and simmered until syrup-y. Next time, I will cut the figs into smaller pieces since they seemed just a little too big. Watch your cheese closely in the oven. I baked too long and it melted. No one complained as they scooped out the delicious gooey goodness. Served with Ritz-type crackers.

Sun-Dried Tomato and Pesto Cheese Spread

Parmesan Potato Soup

This was so good, but I made modifications. Didn't have all the spices, so I used celery seed and onion powder, and added some sea salt to make up for the celery salt and onion salt. The sage added a nice flavor to the parmesan cheese. I used six smallish potatoes, and used the cooking water and added bouillon. I used a cup of heavy cream and a cup of half and half instead of the milk. Served with crumbled bacon and roasted garlic bread. While not wonderful for the waistline, yummy!

Mulligatawny Soup I

This was sooooooo good! I used about 1/2 cup brown rice which I added in the beginning of the simmering time. I also cut the cream down to 1/4 cup (since that's all I had left) and leftover diced turkey. It was thicker due to the increase in rice, yet so rich and creamy despite the decrease of cream. My family gobbled this up and there were no leftovers. I will definitely make this again! Thanks for sharing.

Moroccan Lentil Soup

I had really high hopes for this recipe. I didn't make it past 3 bites before I reached for my spice rack. Something in the spices was off. I tried more garam masala in one bowl, some cinnamon in another bowl, and some allspice in a third bowl. Still the flavor was off. I like the legume and veggie base of this soup, and the texture was great, but I will have to play with the spices to find something that suits me. Thanks for giving me a good place to start.

Easy Herb Roasted Turkey

Wonderful! The meat was moist and flavorful. It was quick and easy to prepare. My 4 year old asked for thirds. It was the first time I didn't want to eat my turkey with gravy or cranberry sauce. I'll be using this recipe again. Thanks for the post!

Hot Buttered Apple Cider

I really liked this drink! The first time I made this, I only used 1/4 cup maple syrup and thought that was a bit too sweet. The second time I omitted the syrup altogether and liked it better that way. The butter was perfect. I used about 1/2 tsp. per cup, let it melt, and stirred well. If you let it sit, yes, the butter floated to the surface and I can see how you might get a mouthful of butter. Just give it another quick stir and it's all mixed up again. I will be making this again next season!

Spicy Cranberry Chutney

I followed the recipe as written except for simmering for a longer time (approx. 20 minutes) and this was fantastic. I made the chutney the day before thanksgiving and reheated it right before dinner. Neither the ginger nor the pepper flakes were too strong. The balance of tangy, sweet, and spicy was just right. Thanks for sharing the recipe!

Thai Curry Soup

My husband and I really enjoyed this soup. I was out of lime so I had to omit it. It would have added to the depth of flavors so next time, I'll make sure I have it on hand. There definitely was a kick to the soup, but it was a nice heat, and leftovers reheated nicely for lunch the next day. I'll be making this one again. Thanks for the recipe!

Pumpkin Black Bean Soup

I've made this recipe several times and it has been a winner for everyone who has tried it. I can't say that it's lovely to look at, but after the first taste, any reservation is gone. Even my kids eat it. I omit the meat and leave the beans whole, but follow the recipe otherwise. This soup is regularly found on our table. I usually double the recipe for lunches throughout the following week. Thanks for the recipe!

Coconut Tilapia with Apricot Dipping Sauce

This is sooooooo good! I do not care for fish, but my kids and husband do, so I make it once in a while. Even the picky eater in my family (me!) ate an entire fillet! The sauce was really tasty and went really well with the coconut/spice coating. Thanks for the recipe! I'm sure it will be made again.
