About this Cook
I am a mother to two small girls, so finding time to cook (anything) is tough most days! I love quick and easy recipes with simple ingredients. On special occasions I might pull out a fancy recipe, but generally I like ones that sort of come together with no muss and fuss. Thankfully, my husband and girls are not too picky of eaters, so they are usually eager to try (and critique) my experiments!
My favorite things to cook
Cookies, casseroles, crock-pot recipes, cakes...anything that's not to difficult or time consuming to put together!
My favorite family cooking traditions
I am planning on starting with my girls when they get just a bit older. My mom is a pretty good cook, but we never seemed to get to spend too much time together in the kitchen. I'm hoping to get to do more of that with my girls.
My cooking triumphs
A raspberry white chocolate cheesecake I made for my husband's 35th birthday. I got rave reviews from our friends. Oh, and the day I finally figured out how to make pancakes that didn't have the consistency of rubber, LOL!
My cooking tragedies
Nothing too major yet. Just the normal mistakes here and there...like most cooks!

Easy Chicken Rice Casserole
I made this recipe almost exactly as listed (subbed one can of cream of chicken with cream of mushroom because that's what I had) and it was just okay. The kids ate it fine, but I found it pretty bland. I think I will play with this one a bit...

Simple Pancakes
This is a good, no-frills recipe. I omitted the margarine, per previous reviews, and it turned out just fine. I also doubled the recipe, as a review stated it was necessary for four or more people. We had OCEANS of pancakes...good thing they freeze well!
