Creamy Vegan Corn Chowder
It was a little spicy, so I'd halve the salt & pepper. Add more carrots or celery for substance. Cook w/ lid on to soften veggies faster. I used regular milk and added a scoop of soy protein and ground flaxseed for a nutritional boost.

Corn and Black Bean Salad
It's basically an oil vinegar dressing on corn & beans. To make this a real salad, I tossed it with greens and cherry tomatoes

Mimi's Zucchini Pie
Pretty good. Recipe calls for way too much oil. 1 tbsp is enough. My family doesn't eat cheese, so I sprinkled Italian bread crumbs on top for a crust. For flavor, I put fresh garlic and Italian seasoning into the mix. Next time, I'll try adding a ham bouillon cube or chopped ham. The tomatoes make this dish so don't skimp!
